SRIRACHA HONEY SALMON

This is a slightly American take on the sriracha craze sweeping the nation. The honey and soy sauce give a twist to what would be hoisin sauce. The jalapeno and onion go nicely with the sriracha flavor. This dish is some what similar to the flavors that would be added to a bowl of pho. It's inexpensive and easy.

Sriracha Honey Salmon image

Steps:

  • Mix honey, sriracha sauce, sriracha paste, onion, jalapeno pepper, soy sauce, cilantro, and lime juice together in a bowl.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Brush salmon fillets with olive oil; place skin-side up on the lined baking sheet.
  • Broil salmon in the preheated oven until skin is crisp, about 5 minutes. Flip and spread honey mixture over salmon. Continue cooking until salmon flakes easily with a fork, 5 to 10 minutes more.

  • In a large zipper bag, add honey, sriracha, minced garlic, soy sauce and water. Seal and shake a few times to combine. Add salmon to the bag and turn gently to ensure salmon is well coated with marinade. Place in refrigerator and let sit for 1 hour.
  • When ready to cook, heat olive oil in a large skillet over medium-high heat. Remove salmon from marinade and discard marinade. When pan is hot, add salmon. Cook 4-5 minutes on each side or until desired doneness. Remove from heat.
  • Garnish with sliced green onions and sesame seeds.

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with foil, grease lightly, and lay salmon on top. Season salmon with salt and pepper to taste. Slice one lime thinly, and slice the slices under the edges of the salmon. In a medium sauce pan over medium-high heat, melt butter. Stir in honey, Sriracha sauce, juice of one lime (about 1 tablespoon), soy sauce, and garlic. Bring to a boil, then reduce to medium heat and cook for 3-4 minutes longer. Pour ⅔ of the sauce over the salmon (reserve remaining sauce for later) and use a spoon or spatula to make sure the sauce covers all of the salmon (you just don't want any "dry" spots). Fold the edges of the foil up around the salmon so the sauce doesn't spill out everywhere (the foil doesn't need to completely cover the salmon). Bake for 15 minutes, then switch to broil and cook another 4-5 minutes until the very edges of the salmon begin to char slightly - watch carefully so the whole salmon doesn't burn. Top salmon with reserved sauce and chopped cilantro and serve.
