LIGHT AND BAKED MOZZARELLA STICKS
This is a light version on a classic appetizer. Serve with marinara sauce.

Steps:
- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

BAKED MEXICAN CHEESE STICKS

- Place the flour in a shallow bowl or plate. In a separate bowl, whisk together the egg and 1 tablespoon water. In another shallow bowl or plate, combine the panko, cilantro, salt and pepper.
- Begin by coating the mozzarella sticks in batches of 2, first dredging in the flour mixture and shaking off excess. Then dip in the egg mixture, letting any excess drip off. Finish by dredging in the panko crumb mixture and shaking any off excess. Transfer the breaded cheese sticks to a sheet pan greased with nonstick cooking spray. Cover and freeze until frozen, about 4 hours and up to 2 days (this will lessen the oozing of the cheese).
- Preheat the oven to 400 degrees F.
- Lightly spray the cheese sticks with nonstick cooking spray. Bake until the cheese is soft and the sticks are lightly browned, about 12 minutes.

- Beat egg in shallow dish. Mix coating mix and 1/2 cup Parmesan in separate shallow dish.
- Dip cheese sticks, 1 at a time, in egg, then in Parmesan mixture, turning to evenly coat both sides of each cheese stick before placing on waxed paper-covered baking sheet. Freeze 2 hours or until firm.
- Heat oil in medium skillet to 375°F. Add cheese, in batches; cook 1 min. on each side or until golden brown. Remove cheese from skillet to platter; cover to keep warm. Top with remaining Parmesan. Serve with pasta sauce.
