This is such an easy side dish recipe that can be made in a jiffy. The roasted pumpkin is flavored with a range of herbs and spices that you can adjust to your own preference.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine olive oil, coriander, oregano, garlic, fennel, salt, pepper, and cayenne in a bowl. Add pumpkin pieces and toss with spice mix. Layer in a roasting dish.
  • Bake in the preheated oven until soft, about 30 minutes.

MIDDLE EASTERN WHOLE STUFFED PUMPKIN

This came from Super Food Ideas and was submitted by the Portelli family for when they have family gatherings. It was suggested you could make up the mince mix the day before, cover and keep in the refrigerator. Also suggested that any excess stuffing could be put in a small baking dish, covered and bake for 30 minutes with the pumpkin. If you choose to make the mince and rice mix the day before allow about 30 minutes to cook and prepare (have not included this in the recipe as I assume it would be done while the pumpkin in baking).

Middle Eastern Whole Stuffed Pumpkin image

Steps:

  • Preheat oven to 210C/190C fan forced.
  • Using a sharp knife, carefully cut a circle from the top of the pumpkin, leaving a 4 cm border.
  • Wrap pumpkin lid in foil and place on a baking tray.
  • Scoop seeds and membrane from pumpkin and discard.
  • Place pumpkin, cut side down on a baking tray and cover with foil.
  • Bake for 1 hour or until flesh is just tender.
  • Meanwhile cook rice following packet instructions and drain and then transfer to a bowl and cover.
  • Heat oil in a large saucepan over medium high heat and cook onion stirring for 5 minutes or until soft and then add lamb mince and cook stirring with a wooden spoon to break up the mince, for 6 minutes or until browned.
  • Add harissa, cumin, cinnamon, chilli flakes, stock, chickpeas and lentils and simmer, stirring occasionally for about 15 minutes or until heated through and season with salt and pepper and then add rice to lamb mixture and stir in the coriander and half the pistachios and set aside.
  • Transfer pumpkin to a board and cut 1 cup of flesh from inside the pumpkin and roughly chop the flesh and add to rice mixture.
  • Fill pumpkin cavity with rice mixture, pressing down firmly with the back of a spoon (see note in intro about excess mix) and return the lid to the pumpkin.
  • Wrap pumpkin in foil and return to baking tray and bake for 1 hour 30 minutes to 2 hours or until tender when pierced with a skewer and let stand for 5 minutes.
  • Remove foil from pumpkin and transfer to a plate (base will be quite soft) and cut into wedges and dollop with yoghurt and sprinkle with remaining pistachios and serve.

Steps:

  • Instructions: Preheat the oven to 375ºF/191ºC. Using a narrow pointed knife, slice around the stem of the pumpkin at a 45-degree angle. Scoop out pulp and seeds. Fill the pumpkin with grated Gruyère cheese until about a third full. Whole Baked Pumpkin - Filled with Cheese Fill the pumpkin with cream until about two-thirds full. Season with salt, pepper, and nutmeg. Throw in a knob of butter, because we all know that pumpkins and butter always pair well. Whole Baked Pumpkin - Filled with Cream and Butter Replace the pumpkin top. The filled pumpkin is now ready to bake. Whole Baked Pumpkin - Covered Bake at 375ºF/191ºC for about 45 minutes to 1 1/4 hours, until tender and spoonable. Check the pumpkins for doneness by removing the lid and poking it with a knife or skewer. Roasted Harvest Vegetables in a Baked Pumpkin image

Steps:

  • Cut off the top of the pumpkin in such a way that it gives you a"top.
  • "Scoop out the seeds of the pumpkin and save them for toasting, or discard them.
  • Clean out the inside of the pumpkin and rub with olive oil.
  • Sprinkle with a bit of salt and add about 1/2 cup of water.
  • Place the pumpkin in a 325 degree oven and bake for about 30 minutes until slightly softened on the inside.
  • Remove from the oven and set aside.
  • Peel and cut the root vegetables in large pieces all about the same size.
  • Place them in a zipper type plastic bag with about 1/3 cup of olive oil.
  • Close the bag and shake to coat the vegetables well.
  • Pour the vegetables in a large roasting pan.
  • Add the cut onions, shallots, minced garlic, and herbs.
  • Stir with a large spoon.
  • Sprinkle with the kosher or sea salt and some black pepper.
  • Place the pan, uncovered, in a 425 degree oven.
  • Roast for about 20 minutes, shaking the pan two or three times.
  • Turn the pan and reduce the heat to 375 degrees and bake for another 20 minutes, shaking or stirring to keep the vegetables from burning.
  • Continue baking until all veggies are soft, about 10-20 minutes more.
  • Remove the vegetables to the warm pumpkin and cover with the top.
  • Serve, adding small pieces of the softened pumpkin if you like.
  • Remember to remove the bay leaves before eating.
  • VARIATIONS: Add some roasted red or green peppers.
  • Add a bit of cayenne pepper for a"hot" taste.
