- Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
- Cook the pasta according to package directions in a Dutch oven, adding the carrots, peas, squash, and/or asparagus for the last 3 minutes of cooking time. Drain, reserving 1/4 cup of the pasta water. Return the pasta mixture to the Dutch oven. Cover and set aside.
- Melt butter in a medium saucepan; whisk in flour and salt. Whisk in the milk, chicken broth, and goat cheese. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Stir in the reserved pasta water, tomatoes, 1/4 cup of the Parmesan cheese, basil, and oregano.
- Pour milk mixture over the pasta mixture, tossing to coat. Spoon pasta mixture into prepared baking dish. Sprinkle with the almonds and remaining 1/4 cup Parmesan cheese.
- Bake 15 to 20 minutes or until the mixture just starts to turn golden and the sauce is bubbly.

HERBED BAKED PASTA PRIMAVERA

- Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Stir in the ricotta, basil and parsley and season with salt and pepper.
- While the sauce simmers, heat the remaining tablespoon oil in a medium skillet over medium heat. Add the zucchini and cook, stirring occasionally, until crisp tender, about 4 minutes. Add the carrots and peas and cook, stirring, just until the carrots start to wilt, about 2 minutes. Transfer to a large bowl.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest for about 10 minutes before serving.

- Bring a small pot of water to a boil. Make an "X" on the bottom of each tomato with a paring knife. One by one, stick each tomato on a fork and dip into the boiling water for about a minute. Remove from the boiling water, and add to a bowl of ice water to stop further cooking. Drain, and use your fingers to peel the skin off.
- Add the tomatoes, Parmesan, pine nuts, olive oil and garlic to a blender and blend until smooth. Season with salt and pepper. Place the sauce in a bowl and set aside.
- Bring a pot of salted water to a boil and cook your pasta according to the directions on the box, and, as always, to make sure you achieve a proper "al dente" texture, drain it about 2 minutes before what is indicated.
- Drain the pasta and pour it into a serving bowl, add the sauce and stir well. Serve dressed with some grated Parmesan, a handful of torn basil leaves and a drizzle of olive oil.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the broccoli, carrots, bell pepper and peas during the last 3 minutes of cooking. Reserve 1 cup cooking water, then drain the pasta and vegetables and return to the pot.
- Meanwhile, make the sauce: Heat 2 tablespoons butter in a large skillet over medium-high heat. Add the garlic and cook, stirring, until it begins to soften, about 1 minute. Add the vegetable broth, 1/2 teaspoon salt, and pepper to taste; bring to a simmer and cook until slightly reduced, about 3 minutes. Whisk in the remaining 2 tablespoons butter until melted and the sauce is thickened, about 1 more minute.
- Pour the sauce over the pasta and vegetables and add the cheese, parsley and lemon juice. Cook over low heat, stirring, until the cheese melts, about 1 minute, adding enough of the reserved pasta water to loosen the sauce. Season with salt and pepper and top with more cheese.

- Combine butter, broth, and cream in a 2 cup glass measure. Cook in microwave, uncovered, at 100 percent for 5 minutes. Reserve. Combine tomatoes, olive oil, garlic, pepper flakes, and parsley in a 4 cup glass measure. Cook, uncovered, at 100 percent for 5 minutes. Reserve. Place a large pot of water on the stove to boil for the spaghetti. In a 11 by 2-inch round dish, arrange the vegetables in concentric rings, with broccoli inside rim, then green beans, zucchini, snow peas, and asparagus. Mound peas in center. Toss mushroom slices and pine nuts in oil and sprinkle over vegetables. Cover tightly with microwaveable plastic wrap. Cook at 100 percent for 7 minutes. Cook pasta in boiling water and drain. Remove vegetables from oven and pierce plastic with the tip of a sharp knife. Reheat reserved sauces at the same time, in their separate measures, uncovered, at 100 percent for 4 minutes. Place drained pasta in a large ceramic dish that will fit into the microwave oven. While pasta is hot, toss with vegetables, cream sauce, and one half the tomato sauce. Reheat pasta, uncovered, at 100 percent for 4 minutes. Remove from oven and toss with Parmesan cheese, salt, and basil. To serve, spoon some of remaining tomato sauce over each portion. * Can use canned tomatoes.

- In a Dutch oven or large frying pan, cook and stir ground beef until brown. Add garlic, tomato sauce, gravy, cream, Parmesan cheese, oregano and basil. Simmer for 30 minutes.
- Meanwhile, cook pasta in a large pot of boiling water until al dente. Drain.
- Combine the cooked ziti and the sauce, and spread into a greased 9x13 baking dish. Sprinkle with mozzarella cheese.
- Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, until bubbly.

Steps:
- Heat a large pot of water to boiling and throw in the pasta.
- Meanwhile, heat 1 tbsp of the oil in a small sauce pan and put in the white part of the spring onion.
- Fry for about 30 seconds and then add the tomatoes.
- Bring to a simmer and let cook for about 10 minutes, adding a spoonful of water if the tomatoes get too dry, until you have a sauce.
- While the tomatoes are simmering, you can lightly fry your veggies in the other tbsp of oil.
- When the tomatoes have cooked down, add the ricotta, milk and hot sauce.
- Blend with a hand blender to make the sauce smooth.
- Drain the pasta and toss with the sauce.
- Top with the veggies, green part of the spring onion and parmesan cheese if desired.
- Salt and pepper to taste.

- Preheat oven to 350°F. Mix vegetables and pasta in 2-qt. baking dish sprayed with cooking spray; set aside.

BAKED PENNE PASTA CASSEROLE
This recipe is so yummy with A LOT of shredded cheese on top. I'm the "add a dash of this or that" kind of cook, so the measurements on the spices are VERY approximate. You can also add more or less mushrooms to your liking. This is my favorite dish at the moment to make and eat!

We loved this stuff,and I made it a lot on weekends, especially in the summer when vegetables were cheap and abundant,before that Kiddo came along. I'd usually make more pasta,since I was going through all the work anyway,and more of the vegetables we liked the best. It would usually last us for about 3 meals. It is very time consuming, but,really worth it when you're finished. And like any recipe, feel free to add any other vegetable or seasoning you like.

- Stem or blanch the various vegetables (broccoli,asparagus,peas,zucchiniø- or squash,and corn) as indicated, combine them and keep them warm.
- In a skillet, saute the garlic in the oil for 1 minute,but do not brown.
- Add the tomatoes,mushrooms,carrot,parsle and pepper,and cook the mixture for about 5 minutes.
- Add this to the reserved vegetables, tossing ingredients gently to combine them well.
- To prepare the sauce, in a small heavy saucepan, melt the butter or margarine,and add flour,whisking the roux over med.
- -lowheat for 1 minute- gradually add the milk and broth,stirring constantly till the sauce thickens slightly.
- Stir in the Parmesan and basil,and heat the sauce over med.

- Cook the spaghetti or linguine al dente,drain and keep warm.
- Place the cooked pasta in a large warmed bowl and spread the veggie and sauce mixture over the pasta, toss the the pasta gently,once or twice, and serve with additional Parmesan, if desired.
SARASOTA'S LIGHTER BAKED PASTA PRIMAVERA
Another Prevention Magazine recipe with a few changes. Since it was in my old recipe box, I presume that this is a quite a few years old, but it is still a great recipe. It is a very basic primavera but I love the creamy ricotta vs the heavy cream sauce. You can change up the "veggies" if you want, but this is pretty classic. Try to get a good quality tomato sauce which can really make a difference in the flavor. If you want, serve with some grilled chicken or steak; or just a nice green salad and some fresh baked bread. It is a great hearty casserole.

- Pasta -- Cook pasta according to package directions. Make sure to use plenty of salted water on medium heat in a large pot. Four (4) minutes before the pasta is done (according to directions) add the broccoli, cauliflower, and carrots right in the pot with the pasta and cook 2 minutes. Then to the same pot, add the mushrooms, squash (zucchini and yellow), asparagus and onions. Cook another 2 minutes. Drain well.
- Sauce -- As the pasta and vegetables are draining, add the tomato sauce, garlic, red pepper flakes, Italian seasoning and a pinch of salt and pepper to the pot and mix well and put back on the stove on medium low heat. Add the pasta and vegetables back in a mix to combine. Check for any additional seasoning if necessary (salt and pepper).
- Bake -- In a 13x9" pan, spray well with a non-stick spray. Add the pasta and vegetables and spread out evenly. Top with the ricotta and spread to cover the top of the dish. Then top with the tomato slices, next is the mozzarella, and lastly, the parmesan. Bake at 425 degrees on the middle shelf, uncovered for 15-20 minutes until bubbly and golden brown on top.
- Serve -- ENJOY! A nice hearty casserole.
