Wicked Good! The crunchy panko crumbs bring new life to this traditional New England favorite. I like baking the fish in the individual dishes, it keeps the fish moist and keeps the juices from drying up. After you make your way through the crunchy topping and flaky fish, you'll be surprised to find this delicious oniony, lemon goodness awaiting on the bottom which is absolutely incredible. Baked Scrod With Lemon Herb Panko Crumbs image

Steps:

  • Preheat oven to 400 degrees F.
  • In a skillet, saute the onion in 1 teaspoon of oil and 1 teaspoon of butter until soft but not browned.
  • In a medium sized bowl, combine the panko crumbs with the parsley and 1 teaspoon of melted butter, 1 teaspoon of olive oil, and the juice of half the lemon.
  • Once the onions are soft, add a pinch of red pepper flakes, salt and pepper.
  • Add to the onions, the juice of 1/2 the lemon (or more!) and the white wine and continue to cook for 1 minute.
  • Spread the onion and lemon mixture into individual baking dishes or one baking dish large enough to snuggly hold all the fish.
  • Place the fish on top of the onions and season the fish with salt and pepper and a little spray of olive oil.
  • Divide the crumb topping evenly over the fish and sprinkle with parsley and give a light spray of olive oil.
  • Bake for about 20 minutes until fish is cooked through and the crumbs are nicely browned.
  • Cover with tinfoil half way through baking if the top is browning to fast.

Simple Lemon-Herb Roasted Salmon image

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large skillet coated with oil over medium-high heat. Fit a wire rack into a sheet pan.
  • Working in batches, sprinkle the Brussels sprouts with salt and pan-fry until browned and the outer leaves are crisp, about 5 minutes. Remove to the wire rack. Once all Brussels have been cooked, transfer the sheet pan to the oven until the Brussels sprouts are tender, about 10 minutes.

  • Preheat the oven to 400 degrees F.
  • Blend the tarragon with bread crumbs, salt and pepper, to taste, in a food processor, pulsing in the dill last. Remove and stir in just enough melted butter to create the consistency of wet sand.
  • Pat the salmon dry and season on all sides with salt and pepper, to taste.   • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.

Steps:

  • In a pie plate put the flour, parmesan cheese, garlic powder, salt and pepper. Stir to combine and set aside.
  • In a second pie plate put the eggs and water. Beat together with a fork and set aside.
  • In a third pie plate put the seasoned break crumbs and the panko (Japanese bread crumbs). Stir to combine and set aside.
  • In a large nonstick frying pan put the oil and butter and heat over medium heat until the butter melts.
  • Wash one chicken breast under cold running water and then dip in the flour mixture, covering well.
  • Next, dip the chicken in the egg mixture.
  • Finally, dip the chicken in the bread crumbs and then put into the frying pan.
  • Repeat with 1-2 more chicken breast pieces and then fry until the chicken breasts are golden on both sides and a fork pierced into the meat shows that the meat is tender and cooked through.
  • As the chicken pieces cook, remove the cooked pieces and add more to the pan until you have cooked 4-6 chicken breast pieces.
  • To plate put a little marinara sauce on the plate. Top with a piece of cooked chicken. Top with some more marinara sauce, fresh chopped basil and the mozzarella cheese on the very top. Either broil in the oven or heat in the microwave just until the cheese melts.
  • Serve at once with pasta on the side.
  • Note: I usually either buy thin slices of chicken breast, buy chicken breast pieces that are not very fat, or pound the chicken breasts to flatten them.
