STRAWBERRIES WITH BALSAMIC VINEGAR
I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

Steps:
- Hull the strawberries and cut them into quarters lengthwise.
- Place in a bowl and toss with the vinegar and sugar.
- Cover and allow to rest on the counter for about an hour so that the berries will "juice" then chill in the fridge for another hour.
- Toss again before serving.
- (I like a little more vinegar sprinkled on before serving but do this to your own taste.
- I should mention that these strawberries do not keep well so they should be prepared and eaten the same day. If made more than a few hours ahead of time they are mushy and texturally unappealing. Just thought I should mention that.
BALSAMIC STRAWBERRIES
Steps:
- Boil 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf and a pinch of salt until thick, 4 minutes. Discard the bay leaf; let the syrup cool. Beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar and 1/4 teaspoon vanilla with a mixer until soft peaks form. Toss 3 pints quartered strawberries with half of the balsamic syrup. Serve with the mascarpone mixture and the remaining syrup.
BALSAMIC STRAWBERRIES
An absolutely delicious dessert. I've seen similar recipes where the pepper is optional, but trust me, you want the pepper.

- Set aside at room temperature.

BALSAMIC STRAWBERRIES
From the Biggest Loser Dessert Cookbook. This recipe serves one but would be easy to increase. Aged balsamic would give the best flavor to this dish. Cooking and preparation time do not include the 30 minute refrigeration time.

Steps:
- Add vinegar and honey to a small to medium sized container.
- Whisk together until well combined.
- Add strawberries and toss until well coated.
- Cover and refrigerate for 30 minutes.
- Toss berries again and transfer to a pretty glass or serving bowl and garnish with basil or mint.

STRAWBERRIES WITH BALSAMIC VINEGAR
Steps:
- Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
- Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.
STRAWBERRIES WITH BALSAMIC VINEGAR
Steps:
- Wash the strawberries and drain. Trim and slice strawberries, and place in a cup or serving dish. Drizzle the balsamic vinegar over the strawberries. Serve with fresh mint leaves.
BALSAMIC STRAWBERRIES WITH RICOTTA CREAM
Steps:
- Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
- In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
- In a medium bowl, toss the berries with the basil and the balsamic syrup.
- Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

- Good source of: Protein, Vitamin K, Calcium, Phosphorus, Selenium
STRAWBERRIES WITH BALSAMIC VINEGAR
Steps:
- Toss the strawberries, balsamic vinegar, sugar, and freshly ground black pepper to taste, in a mixing bowl. Divide the berries among martini glasses and serve immediately.

BALSAMIC BAKED STRAWBERRIES
Balsamic vinegar may seem a strange flavour for a dessert, but it really complements the sweetness of the strawberries.

- Preheat the oven to the lowest possible heat, or use the aga warming oven later. Prepare the strawberries, wash, cut off the tops and halve them lengthways. Place in an oven proof dish.
- Place the balsamic vinegar, sugar and green peppercorns in a small saucepan and heat over a low heat until the sugar is dissolved. Make sure you don't burn the sugar onto the bottom of the pan.
- Pour the balsamic vinegar mix over the strawberries and place in the preheated oven or aga warming oven.
- After about 50 minutes, put the heat of the oven up to 200C, or transfer the strawberries to the aga roasting oven (the hotter one).
- Remove from the oven and serve with ice cream or frozen yoghurt.
BALSAMIC STRAWBERRIES - JUST A LITTLE BIT DIFFERENT!
The use of a balsamic vinegar flavored with fruit is the perfect complement to sweet, fresh strawberries. You could also use a combination of fresh berries, if you prefer. Recipe from Eva Longoria. *Cooking time is really refrigeration time. Notes: Personally, I wouldn't let the strawberries marinate any longer than the 20 minutes or they will be too strongly flavored. The whipped cream really balances the flavors!

- Place the prepped berries into a medium-sized bowl and pour the flavored vinegar over them. Place in the fridge for about 30 minutes.

BALSAMIC-STRAWBERRY POPS
A little balsamic vinegar and a few grinds of black pepper bring out the sweetness of ripe strawberries.

- Place the strawberries and sugar in a food processor and pulse just until the mixture is finely chopped and juicy but still chunky; you don't want a smooth purée. Transfer to a bowl and stir in the balsamic vinegar and a few grinds of pepper.
- Spoon the mixture into ice pop molds and insert sticks. Freeze until firm, at least 6 hours or up to 1 week.
- To unmold the pops, run hot water over the outsides of the molds for a few seconds, then gently pull the sticks.

- cut strawberries anyway you like. Toss with the vinegar and sugar and set aside at room temperature for 30 minutes to 1 hour. Can add a little pepper if you like. I also let soak in refrigerator if I want cold berries.

- For the balsamic toffee:
- Preheat oven to 200°C (400°F). To make the balsamic toffee, place the sugar and balsamic in a bowl and mix to combine.

- Combine vinegar and sugar in a small nonreactive saucepan.
- Bring to a boil, stirring to dissolve sugar.
- Reduce heat and simmer, uncovered, until mixture is syrupy and reduced to about 1/2 cup.
- Remove from heat and stir in vanilla.
- Cool completely.
- Serve drizzled over strawberries or melon.
- Cooking time does not include chilling time.
