BANANA-PINEAPPLE JAM
This recipe is from a preserving book that I have used for thirty years. It is quite sweet, yet flavorful. Very good on a bagel with cream cheese, or as an ice cream topping.

Steps:
- Peel and mash the bananas, then add the pineapple to the bananas.
- Add the sugar to the fruit mixture and pour it into a large enameled pot.
- Stir over low heat until sugar dissolves.
- Bring to a boil over medium heat, stirring continuously.
- Boil mixture for 1 minute.
- Remove from heat, stir in pectin, and stir for 5 minutes.
- Skim and seal in hot sterilized canning jars.
- May be water bath processed for 10 minutes, if preferred.
PINEAPPLE MANGO BANANA HABANERO JAM
You can adjust the heat by keeping more or fewer habanero halves. I found two halves to be just spicy enough for me, one or two more still would've been OK. I didn't think gloves would be necessary for handling the habaneros, but I wholeheartedly recommend them now!

Steps:
- Cut all of the fruits as directed, and place the mango and banana in a blender with 1/4 cup water to blend.
- Mix the blended mango and banana and the pineapple chunks in a pot and mash with a potato masher.
- Set the pot on medium heat, adding freshly squeezed lime juice from two limes.
- Bring the pot to a slow boil and add the sugar and pectin.
- Once boiling, add the habanero halves and allow to boil for another 3-5 minutes.
- Discard 5 of the habaneros (10 halves in total), and mince the remaining habanero (i.e. two halves) and add back to the mixture.
- Ladle the jam into sterilized canning jars (leaving 1/4 inch head room) and boil for 10+ minutes depending on altitude and jar size.
- Allow to cool on a wire rack.

A delicious no-bake dessert, this is the kind for any occasion that everyone loves and wants the recipe for. Vary crusts using chocolate or vanilla wafers. Garnish with nuts or cherries.

Steps:
- Combine graham cracker crumbs and melted margarine, and pat into bottom of 9x13-inch pan.
- In medium, non-stick saucepan over medium heat, combine remaining margarine, confectioners' sugar, eggs, corn starch and vanilla. Bring to a boil, stirring frequently. Continue stirring, reduce heat and simmer 8 to 10 minutes. Let cool, then spread over crust.
- Peel and slice bananas, dipping each piece in lemon juice to prevent browning, and layer over custard mixture. Layer pineapple on top of bananas. Cover all with whipped topping. Keep refrigerated until serving.

Steps:
- Peel the pineapple and grate the flesh -- you should end up with about 2 cups. Put the pineapple and water in a small saucepan and cook over medium-low heat until the pineapple is soft, about 35 minutes.
- Add the sugar and lime juice and stir to combine. Cook until the mixture has thickened, about 45 to 60 minutes. Spoon the jam into a 16-ounce jar with a tight-fitting lid. Store it in the refrigerator for up to 3 months.
