- Place coconut milk, 1-1/2 cups strawberries, banana and syrup in a blender; cover and process until smooth. Divide remaining strawberries among 12 molds or paper cups. Pour pureed mixture into molds or cups, filling 3/4 full. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm, at least 4 hours.

It is just too hot to bake up a banana bread, so when you have bananas that are starting to turn brown whip up a batch of these Banana & Strawberry Popsicles. This is a classic fruit combination and one of my kids favorites. And, because this is a 100% fruit recipe with no added sugar I don't feel bad about letting my kids have a popsicle for breakfast! Yes, I let my kids eat these popsicles first thing in the morning. Score mommy points!

- In a large bowl, dissolve gelatin in boiling water. Stir in the strawberries, pineapple, banana and nuts. Pour 2 cups into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until set, about 1 hour. Set remaining gelatin mixture aside., In a small bowl, combine the sour cream, sugar and vanilla. Spread over gelatin. Top with reserved gelatin mixture. Chill for 1 hour. Spoon 1/3 cup into each mold. Freeze until firm, about 5 hours.

- Line a baking sheet with parchment paper. Peel and slice bananas and place on the prepared baking sheet. Freeze for 1 hour.
- Place strawberries in a blender and pulse a few times until blended but still chunky. Pour blended strawberries into a bowl and set aside.
- Combine frozen banana slices, tahini, vanilla extract, and brown sugar in a blender; blend until smooth.
- Fill each ice pop mold 1/4 full with blended strawberries. Add banana-tahini mixture until molds are 3/4 full. Sprinkle mini chocolate chips on top. Insert sticks and freeze 4 hours or until frozen solid.

FROZEN BANANA LOLLIES
Make for kids and big kids, too! These banana lollies with chocolate, hundreds and thousands and strawberries are great for a party or after-school treat

- Peel the bananas and trim off the very ends if you'd like them neater. Then chop them each into 4 equal-sized chunks. Thread a strawberry onto each lolly stick first, then push on the pieces of banana.
- When all your banana pops are made lay them on a baking tray and put in the freezer, uncovered, for 1 hr.
- Put the yogurt into a tall glass or jug then dip each banana pop into the yogurt to coat (avoiding the strawberries), then place back onto the tray to refreeze until set.
- Melt the chocolate in the microwave in 30 second bursts (stirring after each blast) then pour into a mug. Dip the end piece of each banana pop in the chocolate then sprinkle over the hundreds and thousands.
- The chocolate should set pretty much instantaneously, but you can keep them in the freezer until you want to serve them for up to 1 week.
