This is a very simple and easy way to make banana ice cream. I hope you'll enjoy it as much as my family does and I do. You can also substitute the banana with a different fruit, but i find it tastes best with banana.

- Line a baking sheet with parchment paper. Arrange banana slices on paper and freeze until solid, 3 to 5 hours.

BANANA ICE CREAM CREPES
I originally got this idea from a dessert I had at Joe's Crab Shack. My husband and I loved it so much, that I gave the combination a shot and it turned out just like what my husband and I had eaten at the restaurant. If you have a favorite crepe recipe, any one will probably do. This is the one I like to use. This sweet treat is so amazing, I hope you like it as much as we do.

Steps:
- MIx dry ingredients for the crepes.
- Melt the butter, and let it cool some.
- Whisk the milk and eggs together.
- Add the butter into the milk/egg mixture.
- Slowly mix in the dry ingredients.
- Heat pan to medium heat and spray pan with cooking spray.
- Pour batter onto heated pan, making sure they are spread out and thin.
- Once bottom side is browned, flip to next side.
- Allow your finished crepes to cool slightly.
- Once crepes are cool, scoop ice cream in small scoops and place in the center of the crepe. Roll it like a burrito.
- Shower the crepe(s) with bananas.
- Add whip cream on top.
- Add chocolate sauce to finish the dish.
- And enjoy!

VANILLA BANANA ICE CREAM

- Cut each banana into 6 chunks and freeze until rock solid, preferably overnight.
- Put the banana chunks and vanilla bean seeds or extract in a food processor and process. Hang on, your food processor may jolt in the very beginning! The bananas will look crumbly at first, then gooey and eventually light and creamy- just like ice cream. Stop the food processor frequently to scrape down the sides of the bowl and break up any clumps. Serve right away or scrape into a container and freeze until ready to serve.

- In a large heavy saucepan, heat half-and-half to 175°; stir in sugar and salt until dissolved. Whisk a small amount of hot mixture into eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture reaches 160° and coats the back of a metal spoon. , Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in the whipping cream, milk and vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir in bananas. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. - Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10 to 15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth. Chill mixture in refrigerator until it reaches 40 degrees. Transfer mixture to an ice cream maker and process according to manufacturer's instructions. Place mixture in an airtight container and freeze for 3 to 6 hours before serving.

- In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
- Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
- Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
- In a pan over medium heat, pour ⅓ cup (95 grams) of the batter in the center and swirl the batter around the edges of the pan until set.
- To know when the crepe is ready to flip, lift up one of the edges about ⅓ of the way. The bottom side should be golden brown. Flip the crepe.
- Cook until the edges are starting to slightly crisp.
- Remove from heat and cover with a paper towel to make sure the crepes stay moist.
- In a pan over medium heat, mix the brown sugar and butter until slightly bubbling.
- Add the cinnamon and bananas, stirring until bananas are evenly coated with the caramel.
- Remove from heat and cool.
- Spread half of the banana mixture on half of one crepe.
- Fold the other half of the crepe on top of the bananas, then fold the crepe in half.
- Repeat with the other crepe.
- Serve with whipped cream and a drizzle of caramel sauce.

EASY & HEALTHY BANANA "ICE CREAM"
After seeing this idea floating around the web, I thought I'd experiment a little. Three simple ingredients, no sugar added, no ice cream machine needed... How much healthier and easier could it get? This "ice cream" is smooth like soft serve and naturally sweet. Plus it has the potential for so many add-ins (dark chocolate chips, chopped strawberries, nuts... just to name a few). Please note "Cooking Time" includes time needed to cure in the freezer. If you are as excited as my 4-year-old was to eat this "ice cream", you may choose to serve it directly after turning out of the food processor instead of freezing for 2-4 hours, but please be aware that it will be soft and melt much faster. My daughter, the best taste-tester around, approves, and I hope you do too!
