Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl cream together the sugar and the butter; add eggs one at a time, beating after each addition.
  • Beat in mashed bananas and vanilla and continue beating until mixture is smooth.
  • In a large measuring cup stir baking soda into the buttermilk and add it to the banana mixture along with the flour and chopped nuts.
  • Stir the batter until it is just combined.
  • Pour batter into a greased and floured 9x5 inch loaf pan and bake for one hour or until tooth pick inserted in the center comes out clean.
  • Transfer the bread to a rack and let it cool in the pan for 10 minutes.
  • Turn it out onto a rack and let it cool completely.

  • Preheat the oven to 350 degrees F. Lightly mist a 9-by-5-inch metal loaf pan with nonstick cooking spray and dust well with all-purpose flour to cover the pan completely, tapping out the excess. Put the chocolate in a medium microwave-safe bowl and microwave on high in 30-second intervals, stirring, until melted and smooth, 1 minute to 1 minute 30 seconds. Set aside to cool slightly while preparing the batter. Combine the bananas and sugar in a large bowl and mash with a potato masher or fork until mostly smooth with just a few small pieces of banana left. Add the oil and eggs and stir until combined. Using a wooden spoon or rubber spatula, mix in both flours, the baking powder, baking soda and salt. Stir in the buttermilk and vanilla. Stir 1 cup batter into the melted chocolate. Fill the loaf pan with half the banana batter and then half the chocolate batter. Repeat the layers and gently swirl together using a spoon or knife.   • For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  • Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
  • Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth.   • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy.   • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).

¾ cup unsalted butter, at room temperature
3 large eggs
1 teaspoon vanilla extract
1 ½ cups white sugar

BANANA WALNUT BREAD

This recipe was found the bag of Splenda. It is a little lighter on sweetner and oil than some of the recipe I have seen. I made a few slight adjustments. If you have black walnuts, please use them.

Banana Walnut Bread image

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9 x 5 inch loaf pan with nonstick cooking spray and dust lightly with flour; set aside.
  • Combine the Splenda and other dry ingredients in a large mixing bowl; set aside.
  • Combine the mashed bananas with the oil, yogurt and extracts, mix well.
  • Pour the banana mixture in the dry ingredeints; stir just until mixed, add the walnuts.
  • Pour batter into prepared pan and bake in preheated oven for 40 to 55 minutes or until golden and the center is set.
  • Turn out onto wire rack and allow to cool; cut into 8 generous servings and enjoy.
