BACON BBQ CHICKEN LOAF RECIPE BY TASTY

Here's what you need: chicken breasts, salt, garlic powder, smoked paprika, onion powder, chili powder, pepper, cayenne pepper, bacon, BBQ sauce, cheddar cheese, green bell peppers, red onion, red bell peppers

Bacon BBQ Chicken Loaf Recipe by Tasty image

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut each chicken breast in half crosswise, then cut the larger half again horizontally, creating 3 cutlets. Transfer to a large bowl.
  • In a small bowl, combine the salt, garlic powder, smoked paprika, onion powder, chili powder, black pepper, and cayenne pepper. Stir to combine.
  • Pour the spice mix over the chicken cutlets and toss to coat completely in the seasoning. Set the chicken aside.
  • Arrange the bacon slices in a 9x5-inch (23x13-cm) loaf pan, making sure the bottom and sides are fully covered, and that the strips hang over the sides.
  • Layer in 4 seasoned chicken cutlets, 2 tablespoons of barbecue sauce, 5 slices of cheddar cheese, 4 more chicken cutlets, another 2 tablespoons of barbecue sauce, the green pepper, onion, 2 tablespoons of barbecue sauce, the red pepper, 5 remaining cheese slices, and the remaining chicken. Then, wrap the overhanging strips of bacon over the top of the loaf.
  • Cover the loaf with foil and bake for 1 hour. Then remove the foil, drain any excess fat, and bake for another 30 minutes uncovered, making sure the chicken is cooked through and the bacon is brown and crispy.
  • Remove the bacon loaf from the oven and turn on the broiler. Invert the loaf onto a wire rack set atop a baking sheet and baste the loaf with the remaining barbecue sauce.
  • Broil for 5 minutes, until the glaze dries slightly.
  • Slice and serve with rolls or other barbecue party food.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
  • Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.
  • Add ground chicken, oats, zucchini, barbecue sauce, egg, salt, chili powder, and cayenne to the bowl and mix until well combined. Shape into a loaf and place in the prepared pan. Mixture will be less firm than a traditional meatloaf; this is normal. Glaze with extra barbeque sauce, if desired.
  • Bake in preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 1 hour 15 minutes.

I got this out of the "365 ways to cook hamburg" cookbook. We made it and it was WONDERFUL! I only put in 1/2 the jalepeno because I did not want to make it spicey, but could not even taste it, So do not be afraid to add it.

  • Preheat oven to 350.
  • In a medium bowl, combine onion, bell pepper, jalapeno pepper, 1/2 cup BBQ sauce, rolled oats, corn, eggs, chili powder, worcestershire sauce.
  • and garlic salt.
  • add ground chicken and mix well.
  • Transfer to a 9x5x3 inch pan Bake 1 hour.
  • Spread remaining 1/4 cup of BBQ sauce over top pf loaf and bake until a meat thermometer inserted in center of loaf reads 160, about 15 minutes longer.
  • Let stand 5 minutes.
  • Drain off excess liquid and slice.
