SWEDISH MEATBALLS WITH NOODLES

Steps:
- Preheat the oven to 475 degrees F (245 degrees C).
- Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
- Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
- While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
- Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, bread, onion, milk, salt and eggs. Shape into little meatballs, about 1 inch in size. Place the meatballs into a 9x13 inch baking dish.

- Preheat the oven to 400°F (200°C) (or 350°F (180°C) on a convection oven).
- In a large bowl, mix the ground beef, ground sausage, bread crumbs, onion, garlic, and egg together with your hands until thoroughly combined.
- Roll the mixture into golf ball-sized balls. Use your thumb to create a dent in the balls, add a bit of mozzarella and seal.
- Cut the bacon rashers in half and roll around the meatballs.
- Place the meatballs on a foil-covered tray and bake for 20 minutes.
- Remove from the oven and brush with BBQ sauce, then bake for 5 minutes more. Repeat brushing and baking two more times for an extra-thick layer of BBQ sauce.

- Mince onion.
- Combine hamburger, onion, salt and oatmeal. Add milk as needed for hamburger mixture to hold shape. Make 3/4 - 1 inch meatballs with all of mixture. Place in oven safe casserole dish (I use throw away pans because the BBQ sauce can be hard to get off.).
- Sauce:.
- Mix vinegar, sugar, water, ketchup and Worcestershire sauce.
- Pour mixture over meatballs.
- Bake in oven at 375°F for 15 - 20 minutes. Reduce heat to 350°F for 70 - 75 minutes.
- Start cooking egg noodles about 30 minutes before meatballs are done. Serve meatballs over noodles.

I made this up for New Years as an appetizer and they were such a hit. We ate the leftovers over egg noodles 2 days later, and they were even better. (make a double batch for parties)

- Sauce:.
- Saute diced onion in a large saute pan, put half aside to cool.
- Add BBQ sauce, A-1, mustard, and ketchup.
- Fill the empty BBQ sauce bottle with water and add to pan.
- Bring to a simmer, for 5 minutes, then set aside.
- Meatballs:.
- In a small mixing bowl; blend: egg whites, bbq sauce, A1 sauce, salt, pepper, chili and garlic powders, and margarine.
- Place the beef in a large mixing bowl and slowly add the blended ingredients.
- Slowly add crushed crackers and mix until well blended.
- Roll into small (3/4- 1 inch balls).
- Bake on greased sheet in 350 degree oven for 15 minutes.
- After meatballs are all baked, place them into your crock pot and add the sauce.
- cook on low for 4-5 hours.
- Can be served with toothpicks as an appetizer, on rolls for a sandwich, or over egg noodles as dinner.
