NO-BOIL STUFFED SHELLS
No more wrangling slippery shells. This recipe lets you skip the step of boiling your pasta before stuffing it with cheese. Just fill the shells straight out of the box (it's much easier!) and let the sauce turn them plump and tender in the oven.

- Preheat the oven to 400 degrees F.
- Combine the garlic, egg, ricotta, Parmesan, 1/2 cup of the mozzarella, 2 tablespoons of the parsley, a large pinch of salt and a few grinds of pepper in a large bowl. Fold to combine. Transfer the mixture to a resealable plastic bag and snip a 1/4-inch hole in the corner.
- Spread 1/2 cup of the marinara sauce in the bottom of a 9-by-13-inch baking dish. Pipe the ricotta mixture into the shells and arrange them opening-side up in the baking dish. Cover with the remaining sauce and 1 1/2 cups water.
- Cover the baking dish with foil and bake for 1 hour. Remove the foil, top with the remaining 1 1/2 cups mozzarella and bake until almost all the liquid has evaporated and the cheese is browned, about 10 minutes more. Let cool 10 minutes. Top with the remaining parsley before serving.
BBQ STUFFED SHELLS
These are some of the weirdest little things I've ever created, but they sure are good! These are a great side to take to a potluck or BBQ. They are also a perfect main course next to some potatoe salad and baked beans.

Steps:
- Preheat oven to 350F, and line a 9"-13" pan with greased foil.
- Bring a large pot of salted water to a boil, and cook shells until al dente.
- Brown the ground beef or chicken breasts until fully cooked.
- If using chicken, shred the meat and stir in the BBQ sauce, and set aside.
- If using beef, just stir in the BBQ sauce, and set aside.
- In a medium bowl, stir together the ricotta and egg.
- Drain the pasta and fill each one, half way full, with the ricotta.
- Fill the rest of the way full with meat mixture.
- Bake for 15 minutes then sprinkle on the cheese, and bake for another 5 minutes or until cheese has melted.
- Enjoy!

- Preheat the oven to 375 degrees F (190 degrees C).
- Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes.
- While the shells are cooking, heat olive oil in a large pan or skillet over medium-high heat. Add meatless ground beef and cook and stir until brown, 2 to 3 minutes. Add tomatoes, onion, garlic, 1 tablespoon Italian seasoning, salt, and pepper. Simmer for 2 minutes; add spinach and simmer until spinach is wilted, about 2 minutes more. Taste and adjust salt and pepper if needed. Remove from heat and mix in ricotta cheese and egg until fully incorporated.
- Pour 1/2 cup marinara sauce into the bottom of a 12-inch cast iron skillet or a 9x13-inch baking dish and spread out with the back of a large spoon.
- Drain cooked shells. Stuff each with about 1 1/2 tablespoons of the "meat" mixture. Arrange in the skillet or baking dish. Pour remaining marinara over the top. Sprinkle with Parmesan and mozzarella cheeses. Sprinkle with remaining Italian seasoning and more black pepper.
- Bake in the preheated oven until cheese is golden and bubbly, 35 to 45 minutes.

CHEESEBURGER STUFFED SHELLS
This recipe was given to me by my sister-in-law and it became an instant hit in my family and with friends. It's a slight twist on the classic stuffed shells recipe, using canned tomatoes and Cheddar cheese sauce.

- Bring a large pot of salted water to a boil. Add pasta shells; cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
- Heat a large skillet over medium-high heat. Add ground beef, onion, Worcestershire sauce, and garlic; cook and stir until browned, 5 to 8 minutes. Drain excess grease.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine ground beef mixture, ricotta cheese, 1/2 cup Cheddar cheese, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper in a large bowl. Stuff each pasta shell with 1 to 2 tablespoons of the mixture.
- Mix pasta sauce with water together in a bowl.
- Spread 1/3 of the sauce in the bottom of a large baking pan. Top with 1/2 of the tomatoes. Arrange stuffed shells on top. Pour remaining sauce and tomatoes over the shells. Cover with aluminum foil.
- Bake in the preheated oven until bubbly, about 40 minutes. Uncover and sprinkle 2 tablespoons Cheddar cheese on top. Continue baking until cheese is melted, about 10 minutes.

- Preheat oven to 425. Prepare a 13x9 inch pan with cooking spray; set aside.
- In a mixing bowl, combine egg whites, mozzarella cheese, cottage cheese, and chicken. Mix well.
- Fill cooked shells with cheese mixtures. Place shells in pan.
- Pour spaghetti sauce over top.
- Sprinkle parmesan cheese over top spaghetti sauce.
- Bake, covered, for 15 minutes.

- Bring a large pot of generously salted water to a boil. Add the jumbo shells and cook just until they are pliable. You do not want to fully cook the shells at this point. They should still be very toothsome when tested. Position a colander in the sink and drain the shells into it. Rinse thoroughly with cold water to stop the cooking and make them cool to the touch.
- Use a fork to toss together 2 ½ cups of the barbecue sauce and the pulled pork. Lightly spritz a 9-inch by 13-inch baking dish with non-stick cooking spray. Fill one shell at a time with the barbecue pulled pork until the shell is quite full. Position them in rows –open side up- in the prepared baking dish. When you have used up all the pork and filled the pan, pour the remaining barbecue sauce over the shells and the cup of water. Crimp foil tightly over the pan and bake for 30 minutes. Remove the foil, sprinkle the cheese over the top and return the pan to the oven for 15 minutes or until the cheese is bubbly and lightly browned in places.
