Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

Steps:

  • Soak the wood chips in water for at least an hour and then drain.
  • Whisk together the ketchup, tomato paste, vinegar, Worcestershire and chipotle powder in a large bowl. Remove about a third of this mixture and set aside for the glaze.
  • Pulse the corn chips in a food processor until finely ground, then transfer to a large bowl. Add the ketchup mixture along with the eggs. Stir to combine and let sit for long enough for the corn chips to soften, about 10 minutes. Add the garlic, onion, beef, pork, turkey, 1 tablespoon salt and a few grinds of pepper. Use your hands to mix together until nicely incorporated.
  • Lay out a long piece of foil and shape the meat mixture into a loaf about 10-inches long and 2-inches thick. Top with another piece of foil and crimp and fold the edges shut. Poke several holes on both sides of the foil packet.
  • Prepare your smoker with the drained wood chips for 275 degrees F according to the manufacturer's instructions. Set up a drip pan. Smoke until the meatloaf is about 130 degrees F, about 1 hour and 30 to 45 minutes. Cut open the foil and pull it back, then brush the reserved glaze all over the top. Continue to cook until it reaches an internal temperature of 165 degrees F, about 1 hour and 25 to 30 minutes more.
  • Let the meatloaf rest for about 10 minutes, then slice and serve.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x11-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat until edges just start to curl, 1 to 2 minutes per side. Drain the bacon slices on paper towels. Reserve about 1 tablespoon bacon drippings in the skillet.

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. Steps:

  • Preheat oven to 350.
  • In a large bowl, combine ground beef, egg, crushed saltines, Liquid Smoke, worchestershire sauce, and seasonings. I wear rubber gloves and mix the ingredients by kneading by hand.
  • Spray 9 inch glass casserole dish with cooking spray .
  • Place ground beef mixture into baking dish, forming a round-ish loaf.
  • In a small bowl, combine barbecue sauce, ketchup, vinegar, Liquid Smoke, and Brown sugar, stirring until smooth.
  • Pour over meatloaf.
  • Bake at 350 for 50-60 minutes, depending on your doneness preference.
  • Check doneness using meat thermometer (ground beef should be cooked to an internal temperature of at least 160 degrees for safety.).
  • Serve topped with extra sauce if desired.

this is a mix-n-match recipe that came out super-yummy! the kids loved it as well as hubby. it is VERY moist and does fall apart a bit. throw it over cheddar-mashed potatoes or eat on a bun with cheddar cheese - yum!

  • mix together meat, oatmeal, 1/4 c bbq sauce, eggs, onions and 1/2 can diced tomatoes (drained).
  • form into a meatloaf
  • spread remaining bbq sauce on top/sides.
  • dump rest of tomatoes on top of the loaf.
  • cook for 1 hour, 15 min (or until no longer pink in center) at 375.
