GRILLED BARBECUED SALMON
For a beautiful blend of sweet and spicy, salmon is grilled and basted with barbecue sauce perked up by brown sugar and hints of chili, soy sauce and lime.-Country Woman Test Kitchen

Steps:
- In a small bowl, combine the first six ingredients; set aside 1/4 cup for serving. , Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill salmon, covered, over hot heat or broil 3-4 in. from the heat for 5-10 minutes or until fish flakes easily with a fork, basting occasionally with barbecue sauce mixture., Top with reserved sauce; sprinkle with cilantro.

SEA BASS BARBECUE
Steps:
- Preheat an outdoor grill for medium heat and lightly oil grate.
- In a small bowl, stir together lemon juice, olive oil, salt, pepper and bay leaf. Rub fish with mixture inside and out.
- Grill the fish over medium heat for 8 to 10 minutes, flipping halfway through. Fish is done when it flakes easily with a fork.

BBQ SAMBAL STING RAY/FISH
A local hawker food in Singapore and Malaysia. Probably not the healthiest food, but OH SO GOOD! I'm sure if you can't find the 'weird' ingredients, you can just sub sambal belacan/sambal oelek. Serve with plain rice or coconut rice and some stir-fried vegies.

Steps:
- Stir and strain the tamarind water and discard any solids.
- Grind Spice Paste ingredients until fine.
- Heat oil in skillet, saute the paste until fragrant.
- Add salt and tamarind water, cook for another 2 minutes.
- Add coconut cream and cook for 1 minute over low heat.
- When the mixture is thickened, remove from heat and cool.
- Coat sting ray pieces (or other fish) with the paste.
- Place each piece on a large banana leaf/foil.
- Spread remaining spice mixture over fish.
- Roll up leaf/foil, then grill/barbecue the parcels for 8-10 minutes.
- The length of time required depends on thickness of fish.
- Serve hot with wedges of lemon/lime and cincaluk (optional).
INDOOR FISH BARBECUE
Steps:
- Make a deep pocket in the side of the steak or steaks. Beat butter with scallion, ground cumin, salt and pepper to taste, cheese and drops of lemon juice. Preheat grill or broiler.
- (You can first give the swordfish a "barbecued" smoky flavor in the following way. (Open windows wide.) Line a wok with foil. Set some hardwood chips in wok. Set a cake rack 2 inches above hardwood and set swordfish on rack. Heat wok and when smoke rises, cover fish lightly with foil, then with wok lid and smoke for 4 minutes. Remove from heat.)
- Stuff fish with mixture and grill or broil (2 inches away from heat source) 3 to 4 minutes a side or until just cooked through). Cut into thin diagonal slices and serve over roasted pepper salad.
BARBECUE BAKED FISH
We eat fish (usually fried or grilled) once a week. I don't remember where I found this recipe...I think maybe Southern living, but I adjusted it just a bit. We all liked it for a change of pace from the usual.

- Preheat oven to 400 degrees F.
- Rinse fillets and arrange in a lightly-greased 9 x 13-inch pan.
- Melt margarine in a saucepan.
- Add all of the remaining ingredients to the melted margarine.
- Mix well and stir occasionally for 5-10 minutes.
- Pour mixture over fish fillets.
- Bake 15-18 minutes until fish flakes easily.
