GREEN BEANS WITH PINE NUT BUTTER SAUCE

- cut steam end off of 1 lb fresh green beans. (use fresh frozen when out of season).
- in medium sauce pan bring water to a boil. place green beans in mesh strainer and steam them. (should be hot all the way through while retaining garden fresh snap).
- while beans are steaming, melt butter in med saute pan. when butter is lightly caramelized (just turning a light brown color) add pine nuts.
- saute nuts till butter reaches preferred amount of caramelized color. (I like it to be well caramelized, some people don't though.).
- if you want sauce a little thicker just stir in a pinch of arrow root. Be careful with this as it doesn't take much.
- slice cherry tomatoes in fourths.
- plate green beans all in one direction, spoon a little sauce over middle of beans, place a piece of sliced cherry tomato on top.
- makes an attractive addition to any meal.
HOMEMADE MIXED NUT BUTTER
This is a healthier, creamy alternative to store-bought peanut butter. It is a combination of many different types of nuts so you can mix and match according to your tastes and preferences. I personally like to make it with walnuts, almonds, and pistachios. It is also low in sugar. Great for a healthy snack option pre or post workout.

- Preheat the oven to 350 degrees F (175 degrees C). Spread walnuts, almonds, and pistachios on a rimmed baking sheet.
- Bake nuts in the preheated oven until toasted and fragrant, 10 to 15 minutes.
- Transfer to a food processor while still hot; process at high speed until broken down and starting to clump together. Turn off processor and scrape down sides with a spatula. Begin processing again until a cream starts to form. Add sucralose, honey, vanilla extract, and salt; blend for 1 minute more.
- Add cocoa powder gradually, alternating with milk powder, and process for 1 minute more. Let cool completely. Scoop into a jar and refrigerate.

- First, preheat oven to 350ºF. Then, line a baking sheet with tin foil. Place almonds on baking sheet and drizzle on maple syrup and a sprinkle with sea salt. Toss almonds making sure they are evenly spread out on the baking sheet and coating in maple syrup.
- Once the almonds have completely cooled, transfer into a high-speed food processor. We recommend a Vitamix. Process on high for about 5 minutes, scraping the sides when needed. At this point, if your almond butter has not started to become a drippy nut butter consistency, add in a teaspoon of coconut oil at a time. We used roughly 3 teaspoons. Process until drippy.
- Once the almond butter is at the desired consistency, add in paste from 1/2 a vanilla bean and give it one last whirl to mix it all together.
