BEANS & SAUSAGE - CROCK POT

I found this in a crock pot cookbook, and although it was similar to some recipes already on here, I wanted to post it so I would remember to try it. The recipe says you can substitute any type of canned beans, just use two types. Suggestions for white are great northern, butter beans, or cannellini. For red, you could try small red or kidney beans. Fresh or fully cooked sausage can be used.

Beans & Sausage - Crock Pot image

Steps:

  • In an ungreased skillet over medium heat, brown the sausage. If using fully cooked or smoked sausage, slice and set aside. If using fresh sausage, add the water, cover and cook 8 to 10 minutes until completely cooked through. Uncover and cook a few minutes more. Cool and slice.
  • In a clean skillet, heat the oil over medium. Add the peppers, onion and garlic, stirring just until tender.
  • Transfer to the slow cooker and add the sausage, beans, tomatoes and their juice, and wine. Cover and cook on HIGH for 3 to 4 hours, or LOW for 6 to 8 hours. Near the end of the cooking time, check the consistency and cook with the lid off to thicken if desired.
  • Season with salt and pepper and serve.

  • Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
  • Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

Steps:

  • Tear the greens into large pieces, wash under running water to clean well, drain.
  • Preheat a heavy skillet with olive oil, add onion and garlic; cook stirring frequently until onions begin to lightly brown, add minced jalapeno peppers.
  • Place the cooked onions in the bottom of the crock-pot, add the drained greens, crushed red pepper and water.
  • In the same skillet used for the onion, lightly brown the sliced sausage and place on top of the greens.
  • Cook on low for 3 hours. Stir in drained beans and continue to cook for addition 1 to 2 hours or until greens are tender.
  • In 2-quart saucepan, combine the polenta and cold water with wire whisk. Stir in boiling water and salt. Cook over medium-high heat, stirring constantly, until mixture thickens and boils; reduce heat. Cover; simmer 10 minutes, stirring occasionally.
  • Divide the polenta between serving bowls, spoon the cooked greens and sausage over and drizzle with balsamic vinegar if desired.

  • Soak the black beans overnight in a generous amount of water.
  • Preheat the crock pot on high while prepping.
  • Drain beans, rinse, and place in a large pan, cover with cold water, and bring to a boil, boil for 10 minutes, then drain and put them in crock pot.
