Also known as chicken fried steak. Not to be confused with chicken. When they do chicken this way it is chicken fried chicken.

Steps:

  • Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area.
  • Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  • Season both sides of cube steaks with additional salt and pepper, if desired.
  • Dip cube steaks in milk, then dredge in seasoned flour.
  • Dip floured steaks in egg wash, then again in the seasoned flour.
  • Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  • Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from heat and set the steaks aside.
  • Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans.
  • Add enough butter to the pan to equal 3 tbsp along with the oil.
  • Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  • Slowly add the remaining 2 cups milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
  • Serve Country Fried Steaks (Chicken Fried Steak, as we call it) with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

Steps:

  • Put flour and salt and pepper in a plastic bag and shake to mix well. Next add the cube steak and shake to coat all sides of the steak. Heat the oil in a fry pay over medium high heat. When hot add the cube steak and cook 2 to 3 minutes per side, flip and cook 2 to 3 more minutes. Cut steak to see if it is cooked to your satisfaction. Fix the gravy according to package direction. Put cube steak on plate, top with gravy and serve.

  • Season the meat on both sides with salt and pepper.
  • Cover meat generously with flour on all sides and set aside.
  • pour oil in skillet and heat over medium-high heat for about a minute, then place meat in skillet and brown on both sides until crispy and brown. 3 minutes per side.
  • After browning meat place all pieces in skillet, turn heat to medium-low, put onions on top then add beef broth. Place lid on skillet and cook for 45 minutes. During the last 10 minutes mix cornstarch and water together and add in skillet to make gravy thick.

  • Heat a medium-high skillet over medium-high heat. Add oil. Cook's Note: Oil is heated when you drop a little flour in and the oil spits.
  • Pound out the cube steaks with a meat mallet until they are 1/4 to 1/2-inches thick. Salt and pepper both sides. Mix the flour, cayenne and paprika together in a bowl. Beat the eggs in another bowl. Dredge the steaks through the flour, then egg mixture, then through the flour again.
  • Place the steak carefully in the pan as the oil will splatter. Cook until golden brown, about 4 to 6 minutes on each side. When finished, place on a sheet tray lined with paper towels, hold in a warm oven and repeat the procedure with the other pieces of steak.
  • When all steaks have been cooked off, pour off all but 2 tablespoons of the cooking oil and lower heat. Add 3 tablespoons of the leftover flour mixture to the oil and whisk to create a paste. Cook until golden, about 1 minute. Gradually add the milk to the flour and oil mixture while whisking together. Season the gravy with salt and pepper, to taste. Let cook until thickened; about 10 minutes. Pour gravy over the steak to finish and garnish with parsley.

  • HOUSE SEASONING:.
  • Mix ingredients together and store in an airtight container for up to 6 months.
  • STEAK:.
  • Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl.
  • Sprinkle 1 side of the meat with the House Seasoning and the other side with the seasoning salt, and then dredge the meat in buttermilk and then flour.
  • Heat 1/2 cup oil in a heavy skillet over medium-high heat.
  • Add 2 or 4 of the steaks to the hot oil and fry until browned, about 5 to 6 minutes per side.
  • Remove each steak to a paper towel-lined plate to drain.
  • Repeat with the remaining steaks, adding up to 1/4 cup more oil, as needed.
  • Drain all but 4 TBS drippings, and scrapings.
  • GRAVY:.
  • Add 4 tablespoons flour to the pan drippings, scraping the bottom with a wooden spoon.

  • Sprinkle meat tenderizer on both sides of steaks Prepare coating by mixing salt, pepper, and paprika into flour with a fork Beat eggs in a mixing bowl and stir in the milk Heat the oil/shortening at medium heat while you assemble the steaks.
  • If you have a large skillet you can fry more than one at a time.
  • Use enough oil/shortening so it covers the bottom of the skillet by 1/2 inch.
  • Dip each steak first in flour, then in egg&milk, then in flour, back in egg&milk, final dip in flour and then set carefully in the hot oil.

  • The steaks are heavy and you don't want to splatter hot oil everywhere!
  • If you have some metal tongs, they come in handy for this job, paired with a fork to lift the steak enough to get a firm grip on it.
  • Fry the other side for about 5 min. until golden, then use tongs/fork to lift onto a paper-toweled plate to drain.
  • Transfer 2-4 tbsp. grease from frying pan to sauce pot, heat at medium setting.
  • Make a roux by mixing 1/4 c. flour into the hot grease with a fork, cooking until golden brown.
  • Add milk and stir mixture often until it bubbles and thickens to your liking.
  • Salt and pepper the gravy.

  • On a plate place 1/2 cup Bisquick mix. Into small bowl, pour buttermilk. In another plate put bread crumbs.
  • Coat beef steaks with Bisquick mix. Dip each coated steak into buttermilk, then coat with bread crumbs.
