Steps:
- Coat beef and onions in flour and brown in butter in a large pot.
- Add beef broth, curry powder, and bay leaves. Simmer for 30 minutes.
- Add potatoes, vinegar, and salt. Simmer for another 60 minutes.

BEEF AND LENTIL SOUP
A great lunch soup full of protein. I make a batch of this and warm it up all week.

Steps:
- Heat the olive oil in a large pot over medium-high heat until it begins to smoke. Season the beef with salt and pepper, then gently place into the hot oil, and brown on all sides, about 8 minutes. Once browned, remove the beef and set aside, reserving the remaining oil in the pot. Stir in the celery, carrot, onion, garlic, cilantro, and oregano; cook and stir until the onion has softened and turned translucent, about 8 minutes more.
- Pour in the chicken broth, tomatoes, and browned beef. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the meat is beginning to turn tender, about 1 hour.
- After the soup has simmered 1 hour, add the lentils, recover, and continue simmering until the lentils are tender, about 40 minutes. Season to taste with salt and pepper, then stir in the parsley. Sprinkle with Parmesan cheese to serve.

SIMPLE BEEF CURRY
I love curries, and the beef (instead of chicken/pork/lamb) is a nice change. Adjust the curry to your taste, I like mine pretty strong! You could use ground sirloin, too, and serve it over mashed potatoes...sounds weird but both of the end results are fabulous!

Steps:
- Heat the oil over medium heat and saute the onion for about 3 minutes, or until translucent.
- Add the garlic, curry, paprika, chili powder and salt. Cook, stirring constantly, for about 3 minutes.
- Add the beef and stir.
- Add 1/2 cup water and bring to a medium simmer. Cover, and cook for about five minutes.
- Add enough water to cover the beef and cover once again.
- Cook for 1-2 hours (adding water as needed), or until meat is tender and the sauce is thick.
- Serve over rice and garnish with the parsley or the cilantro.

- Combine flour, salt, and pepper in a bowl, then add beef, tossing to coat. Shake off excess flour. Heat the olive oil in a large skillet over medium-high heat. MULLIGATAWNY (INDIAN) SOUP ( BEEF )
This was my favourite soup from the Bell Canada cafeteria; many years later, I found the recipe in a Soup & Starter cookbook! Its a good way to use up leftover roast beef (or lamb). If I don't have dripping on hand, I broil some bacon, use the bacon fat & eat the bacon!!

- Fry vegetables & apple in drippings until soft & beginning to lose colour.
- Stir in flour & curry and cook for 1 minute.
- Add stock, tomatoes & seasoning.
- Bring to a boil, then lower heat, cover & simmer for about 1 1/2 hours, stirring occasionally.
- Sieve or liquidize the soup & return to pot.
- Add minced beef & rice.
- Bring back to the boil for 2- 3 minutes, check the seasoning & serve.

- Melt the butter in a large saucepan. Cook onions and beef cubes until beef is browned and onions are tender.
- Add the beef stock, curry and bay leaves. Cook over low heat for 30 minutes.

INDIAN BEEF AND MUSHROOM CURRY
This is great if you make it the day before to let the flavors develop. Make until step 3 then refrigerate. Repeat it gently until hot before finishing dish. Creamed coconut is not the same as coconut cream. Creamed coconut is a very concentrated coconut extract without the water. It is basically coconut cream concentrate, and can be made into coconut cream by mixing it with water, or into coconut milk by mixing it with a larger amount of water

- Cube beef into small bite size pieces. Heat oil in saucepan and add beef. Stir frequently when browned remove.
- Add onion, garlic, ginger, chilies, curry and coriander to the pan cook 2 minute Stir in mushroom, stock, salt and tomatoes.
- Return beef to pan, cover and simmer until beef is tender about 1-1 1/2h.
- Stir in chopped creamed coconut and ground almonds into the curry then cover the pan and cook gently 3 minutes.
- Meanwhile heat the remaining oil in a skillet add pepper, scallion, fry gently you will want them to be tender crisp. Add cumin cook 1 minute. Spoon over curry and serve immediately.

- Sprinkle beef with salt and pepper; toss with flour. In a Dutch oven, heat oil over medium heat; cook beef and onion until lightly browned, stirring occasionally. BEEF CURRY

- Heat one tbsp of the oil in a casserole pot over a medium-high heat. Season the beef and fry in the pot for 5-8 mins, turning with a pair of tongs half way until evenly browned. Set aside on a plate.
- Heat the remaining oil and butter in the pan and add the onions. Fry gently for 15 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, ground coriander and cardamom and fry for two mins. Tip in the tomatoes, stock and sugar and bring to the simmer.
- Add the beef, put a lid on top of the curry and cook over a low heat for 1 ½ - 2 hrs or until the meat is tender and falling apart. Remove the lid for the last 20 minutes of cooking.
- Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice.

- cut broccoli into small florets, peel and slice stems.
- in large pot of boiling salted water, blanch until tender-crisp, about 4 minutes. remove with slotted spoon and chill under cold running water, drain and set aside.
- in same pot boil noodles until tender, about 5 minutes, drain and rinse with cold water. drain again and set aside.
- in wok or large skillet, heat 1 tablespoon oil over med-high heat. stir fry onion until golden, about 8 minutes. remove from pan with slotted spoon, set aside.
- add 2 teaspoons oil to pan, add curry paste, salt and black pepper, fry until fragrant. add steak and stir fry until rare, 1 to 2 minutes.
- add tomatoes with juices, onion and 1/4 cup water, boil for 1 minute.
- add noodles and broccoli, stir fry until heated through, about 3 minutes.
