BIRD'S NEST COOKIES

Steps:
- 1. Preheat oven to 300 degrees. Spread coconut on non-greased cookie sheet. Toast in oven, stirring occasionally, until it turns light golden, about 25 minutes.
- 2. Remove coconut from cookie sheet and set aside.
- 3. Increase oven temperature to 350 degrees. In large bowl, add butter and sugar and whip until light and fluffy; beat in egg and vanilla.
- 4. In medium bowl, combine flour and salt. Blend into creamed mixture.
- 5. Form dough into 1-1/4-inch balls. Roll heavily into toasted coconut.
- 6. Place coconut cookies 2 inches apart on lightly greased cookie sheets. Make indentation with thumb in center of each cookie. Bake 12 to 14 minutes or until golden brown.
- 7. Remove cookies and cool completely. Fill indentations with M&M'S® Brand Speckled Milk Chocolate Eggs.
BREAKFAST BIRD'S NEST
My grandmother and mom both made these for me when I was very little and now I make them for my little ones. They love their eggs made this way. Some people call them "egg in a window", but my mom always called them "bird's nests". Kids love them, but I still make them for myself :) There's just something yummier about the "dipping" toast being fried in butter instead of just popped in the toaster, and after dipping, the egg white tastes great with the fried bread from the "nest".

Steps:
- Lay bread on the counter or a plate.
- Using a wide topped glass, cut a circle out of the center of the bread.
- Over medium heat, melt 1 tsp butter in a non-stick skillet.
- When heated, lay both pieces of bread (the circle and the piece with the hole) in pan and reduce heat to low-medium.
- When bread is very lightly browned on the bottom, drop 1 tsp butter into the hole.
- When melted, crack the egg over the hole and allow egg to drop into and fill the hole.
- Cook for 1- 2 minutes and then flip the bread with the egg and the bread circle over.
- Cook for about 2- 3 minutes, until bread is lightly browned and egg is set.
- Serve egg with the toasted bread circle for dipping.

- Soak bird's nest overnight. Then remove water and clean.
- In a stockpot add cooking oil and boil the chicken stock then add in birds nest. Let it heat for 10 minutes. Add the rest of the ingredients and let it heat for another 10 minutes. Add in cornstarch roux to lightly thicken the soup and stir in the chicken meat, mushrooms and turn off the heat and let stand for 5 minutes before serving.

A very simple recipe for those who are new with using the oven as well as for those who love eggs. A fantastic snack with an even more fantastic name, the next time you are off for a picnic and want to try something new, here it is -Egg on the bird's nest!

Steps:
- Pre-heat oven for 2 minutes (180C).
- Beat the egg whites of the 2 eggs, one at a time, till stiff.
- Now take the 2 bread slices and using a spoon, apply the egg whites in the 4 corners of each slice.
- Put the entire egg yolk (without beating it) in the center of each slice.
- Place on a wire rack.
- Bake for 5 minutes till golden brown on either side.
- Remove from oven, place on a plate.
- Sprinkle salt and pepper to taste.
- Decorate with Tomato Ketchup on each slice.
- Enjoy it as picnic food or as a morning or evening snack!

- Melt 8 ounces chopped semisweet chocolate in a heatproof bowl set over a saucepan of simmering water, stirring. Remove the bowl from the pan and stir in 2 cups canned potato sticks. Coat a 6-cup muffin pan with cooking spray and scoop some of the chocolate mixture into the cups; make an indentation in each to form nests. Chill until set, at least 3 hours. Fill with marcona almonds.

This is a traditional apple dessert, where the apples are cooked in a fluffy crust. This recipe comes from "The Little House Cookbook" by Barbara M Walker, and it featured in "Farmer Boy." This is my favorite recipe from this cookbook.

- Butter a baking dish (2-quart). Peel and core the apples and place them in the dish. Fill the wholes with brown sugar, pressing slightly, and sprinkle half the nutmeg on top. Place in preheated 350 ° F oven to start baking while you prepare the batter.
- Separate the eggs, putting the yolks into a larger bowl and the whites onto a platter. Beat whites with a fork or whisk until they no longer slip from the tilted platter. Beat the yolks until they change color; stir in maple flavoring and milk. In smaller bowl mix flour, cream or tartar, baking powder, salt, and any remaining brown sugar. Stir this mixture quickly into the liquid. Fold the egg whites into this thin batter.
- Pour the batter evenly over and around the partly cooked apples and return dish to the oven, baking it until the crust has browned, another 45 minutes to 1 hour.
- While the pudding bakes, stir the powdered sugar and remaining nutmeg into a pitcher of heavy cream. Take the finished pudding directly to the table before it falls, and turn each serving onto a plate so the apple is nested in the fluffy crust. Pour sweetened cream over them.

CHINESE SEAFOOD BIRD NEST - THE WOKS OF LIFE

- For the taro basket, spread the julienned taro in a criss-cross pattern over a large steel mesh strainer, letting some of the taro hang over the edges. The taro will be slightly wet and starchy after it is julienned, which is exactly what you want for maximum adhesion. Take another steel mesh strainer of the same size and place it over the top so the taro strands are sandwiched between the two strainers.
- In a wok or pot, heat 6 cups of oil to 325 degrees F (use a thermometer to check the temperature), and place the “nest,” still sandwiched between the two strainers, in the oil. Fry until golden brown, tilting the basket in different angles so the entire taro basket is fried evenly. Using a wok for frying is ideal, as you will have more room without having to use excessive amounts of oil, but a deep pot large enough for the basket will work also. Be sure to place the taro basket in the pot slowly and use the utmost caution! Using a deeper pot or wok also makes frying safer since the taro basket, when first placed into the oil, will cause the oil to expand and overflow if your pot is too small and if your oil is too close to the top of the pot.
