BEEF BRAISED IN SWEET WHITE WINE

The Best Recipes in the World; Mark Bittman. Reportedly a specialty of southwestern France. He recommends using Montbazillac, a good Sauterne ,or Barzac. The sauce is described as "nicely but not cloyingly sweet". Recommended to serve over buttered noodles.

Beef Braised in Sweet White Wine image

Steps:

  • Add 2 tablespoons oil in a large skillet over med-high heat; wait a minute or so and when the oil is hot, add the beef.
  • Brown the beef well on both sides, about 10 minutes, adjusting heat so the meat browns but does not burn.
  • Sprinkle the meat with salt and pepper as it browns.
  • Transfer meat to a plate; decrease heat to medium.
  • Add the remaining oil and vegetables to the skillet; stir once, then cover.
  • Cook for 10-15 minutes, stirring once or twice, until the onions are browned, dry, and almost sticking to the pan.
  • Uncover, then add the wine and stir.
  • Add in the meat and cover again.
  • Adjust the heat so the mixture simmers steadily but not violently and cook until the meat is tender (this may be as short as 90 minutes or as long as 3 hours).
  • Transfer meat to a cutting board; let it rest for a couple of minutes.
  • Taste and adjust the sauce seasoning; you should be able to taste the pepper.
  • If the mixture is very thin (unlikely), boil it down for a few minutes, as needed.
  • Carve the meat and serve it with the sauce spooned over it.

2 -3 lbs beef brisket or 2 -3 lbs boneless beef chuck

1 tablespoon minced garlic
2 -3 medium carrots, cut into chunks
1 cup sweet white wine

JAPANESE-STYLE BEEF STEW

The beef stew here will be unfamiliar to most cooks, though it has much in common with the classic American dish. It is Japanese in origin and loaded with the warmth of soy, ginger, sweetness (best provided by mirin, the sweet Japanese cooking wine, but sugar or honey will do, too), winter squash and the peel and juice of a lemon. These simple and delicious counterpoints make a great stew.

Japanese-Style Beef Stew image

Steps:

  • In a large nonstick skillet over medium-high heat, sear meat until nicely browned on one side, about 5 minutes. Transfer chunks to a medium-size casserole.
  • Add stock to the skillet, and cook over high heat, stirring and scraping until all the solids are integrated into the liquid. Pour into the casserole with soy sauce, mirin, ginger and a couple of grindings of pepper. Peel lemon, and add peel to the mixture. Juice lemon.
  • Cover, and cook on top of stove (or in a 350-degree oven), maintaining a steady simmer. Stir after 30 minutes. Then check meat every 15 minutes.
  • When meat is nearly tender, about 45 minutes, stir in squash and continue to cook until squash is tender but not mushy, about 15 to 20 minutes. Add salt if necessary, then stir in lemon juice. Serve.

BEEF STEW WITH PRUNES

Braised dishes like this beef stew may feature green, orange, yellow or red vegetables but their most appetizing color is brown, the shade of brown whose glossy darkness shouts intensity and richness. The key to achieving that glorious color and flavor is sufficient browning of the meat. Don't rush. The good thing is, this savory-sweet stew can almost be ignored while it is cooking and can be made in advance, the night - or even two - before you serve it. Couscous makes a great accompaniment, as does saffron rice, because those bring out the color of the stew. Plain crusty bread is another great option. This is simple cold weather food at its most appealing.

Beef Stew With Prunes image

Steps:

  • Place a deep skillet or casserole that can be covered over medium-high heat, and add oil. Brown meat well on all sides, seasoning with salt and pepper, for 10 minutes; remove with a slotted spoon.
  • In same pot over medium-high heat, sauté onion and tomatoes with a large pinch of salt and some pepper. When they soften, about 5 minutes, stir in paprika, cinnamon, and bay leaf. Return meat to pan, and add stock and wine; bring to a boil, then lower heat, cover, and simmer for 30 minutes. If mixture starts to dry, add a little water or stock.
  • Remove cinnamon and bay leaf, and stir in sugar and prunes. Simmer until prunes and meat are soft, another 30 to 45 minutes. (Dish can be made in advance to this point; let sit for a few hours, or cover and refrigerate for up to a day before reheating and proceeding.) When meat is very tender, uncover pot and add vinegar; if necessary, raise heat so sauce thickens and becomes glossy. Season to taste with salt and pepper, and serve hot, garnished with parsley.
