Steps:
- Grease a 20 x 30 cm roasting pan and line the base with greaseproof paper.
- Preheat the oven to 150C/300F/gas mark 2.
- Melt the butter, soft brown sugar and treacle in a pan.
- Sift the flour, ground ginger and cinnamon then stir in the melted mixture with the beaten eggs. Warm the milk to blood heat, pour it on to the bicarbonate of soda, stir it in and add it to the mixture. Stir well and pour the mixture into the prepared tin.
- Bake the gingerbread for about 1 1/2 hours. Cover the top with greaseproof paper after 1 huor.
- When the gingerbread is cold cut it into fingers and serve it spread with butter.

- Put flour, ginger, mixed spice, and bicarbonate of soda into a bowl.
- Put the butter, black treacle, syrup, brown sugar into a pan and heat until fat has melted.
- Cool slightly and add to dry mixture.
- Mix in the eggs and enough milk to make a cake batter.
- Pour into a lined 7 inch square tin.
- Sprinkle with the almonds (optional).
- Bake in a preheated oven Gas 3 for 1-1/2 to 2 hours until firm to the touch.
- Cool on a wire rack.
- This gingerbread keeps really well, and will become softer and stickier the longer it is kept in an airtight container. But, will it last?

BLACK STICKY GINGERBREAD RECIPE
Steps:
- Preheat the oven to 325F / 165C, with a rack in the center. Butter and line a 13x9x2-inch (33x23x5-cm) baking pan so the parchment hangs over by a couple inches. This will help you remove the cake from the pan later on. Combine the butter, water, molasses, honey and brown sugar in a medium non-reactive saucepan and place over low heat. Stir the mixture frequently until the butter is just melted, and all of the ingredients are well blended. Remove from the heat, pour into a large bowl and set aside to cool. Meanwhile, combine the flour, baking soda, salt, ginger, cinnamon, all-spice and cloves, and set aside. When the molasses mixture feels just warm to the touch, add the eggs, one at a time, mixing well after each addition. Add the milk and stir to combine. Fold the dry ingredients into the batter, and don't be overly concerned if you can't get every lump out. Stir in the grated ginger. Pour the batter into the prepared pan and bake for ~45-60 minutes. Start checking for doneness after about 45 minutes. When the top of the cake springs back when touched you're good. For me this is usually ~55 minutes, but the baking time will depend on your oven and the shape of your pan. Allow the cake to cool for 10 minutes, then, using the overhang of parchment (if you're using a rectangular pan), lift the cake out of the pan and cool completely on a wire rack before cutting. If refrigerated, the texture becomes dense and sticky - in a good way, just let it come up to room temperature before serving. And as I'm sure you can imagine this cake is particularly nice served with boozy whipped cream. Serves 12-16. STICKY GINGERBREAD
This recipe takes no time at all to prepare, and is simply delicious. It's perfect for a well deserved tea/coffee break, but equally good served slightly warm with some good vanilla ice cream. My two young children love this cake-my 3 year old son calls it Mummy's special ginger cake! It keeps very well and freezes well too!

- Set oven to 160°C Grease a 11 x 9" tin with baking parchment.
- Sift the flour, ginger, baking powder, bicarbonate of soda and salt into a bowl. Place the sugar, butter, syrup and treacle in a pan and heat until the butter has just melted. Don't allow it to get too hot.
- Stir in the milk then beat in the egg. Pour in the dry ingredients and beat together.
- Pour immediately into baking tin and bake for 1-1/4 hours until firm to the touch. Allow to cool for 10 minutes, then turn out of tin and allow to cool completely.
- NB You can also add a few finely chopped pieces of stem ginger to the mix if you wish.

EASY OLD FASHIONED ENGLISH STICKY GINGERBREAD LOAF
Just the smell of this gingerbread loaf whilst it's baking is redolent of when I was a little girl and staying at my grandparent's old cottage..........and, it is so easy to make. Plus, there are not many ingredients to it and yet, it is the recipe I always turn to when I feel like real old-fashioned sticky gingerbread! My grandmother used to serve it in thick slices with butter; it nearly always appeared on the tea table at least once a week! This is also wonderful served up as a Pudding type cake, warm with custard or cream, delicious! Oh yes, this gingerbread only contains 2 ounces of fat in it, making it low fat as well as very tasty!

- Pre-heat oven to 180C/350F/Gas mark 4.
- Grease and line a 2 lb loaf tin.
- Mix the flour with the salt, baking powder, ground ginger & raisins if using.
- Melt the butter or margarine and add the sugar, black treacle - mixing them together very well.
- Add the butter mixture to the flour mixture - and mix with a wooden spoon.
- Gradually beat in the egg and milk mixture to make a smooth, thick batter.
- Pour into the greased and lined 2 lb loaf tin and bake for about 45 minutes, or until a skewer when inserted comes out clean.
- The gingerbread loaf should be well risen and slightly sticky to the touch, although it gets stickier the longer it is kept.
- Slice and eat warm with butter, or leave to go cold and store in an airtight container.
- Also wonderful served warm with custard or cream.
- Keeps very well for a week or more.
