- Heat oven to 350°F In a large mixing bowl cream butter, vanilla and sugar until light and fluffy. Beat in eggs, one at a time.
- Sift flour, baking powder, baking soda and salt together. Mix mashed bananas and milk together.
- Blend dry ingredients into batter alternating with banana mixture. Stir in chopped nuts.
- Pour batter into 2 greased and floured 8-inch round or square baking pans.
- Bake for 30 to 40 minutes or until cake tester inserted in center comes out clean.
- Cool 10 minutes, then turn out on racks until thoroughly cool. When ready to serve frost with Cream Cheese Frosting.
- Cream Cheese Frosting: In mixing bowl, stir cheese until smooth. Gradually beat in sugar a little at a time. Add vanilla; beat until smooth. Spread mixture between layers and around sides.

- Set oven to 325 degrees.
- Grease and flour a 10-inch tube pan.
- In a large bowl using an electric mixer at medium speed cream the butter and shortening with sugar and vanilla until fluffy (about 4-5 minutes, no sugar granules should remain).
- Beat in eggs one at a time until combined, then mix in mashed bananas.
- In a bowl combine flour, baking powder and cinnamon; stir into the creamed mixture alternately with half and half cream.
- Stir in the walnuts.
- Pour into prepared tube pan.
- Bake for 1 hour and 20-30 minutes or until a toothpick inserted in the crown comes out clean.
- Cool in pan for 15 minutes before turning out onto a wire rack to cool completely.

- Place first seven ingredients in a large bowl. Beat on low speed just until combined, then on medium for 2 minutes. Pour into a greased and floured 10-in. tube pan or a 13x9-in. baking pan. , In a small bowl, combine topping ingredients until crumbly; sprinkle evenly over batter. Bake at 350° for 45 minutes. Cool. Store well-wrapped in refrigerator.

Steps:
- Preheat oven to 350°F; grease and flour 2(9-inch) cake pans.
- For the cake: In a medium bowl, stir together flour and baking soda; set aside.
- Using an electric mixer, cream together shortening and sugar in a bowl until light and fluffy, about 2 to 3 minutes.
- Add eggs 1 at a time, mixing well after each addition.
- Mix in mashed bananas, buttermilk,and vanilla; add flour mixture and mix until just combined.
- Stir in walnuts.
- Pour into prepared pans, bake until a toothpick inserted comes out clean, about 35 minutes.
- Cool in pans on a cooling rack, remove from pans and cool completely.
- While cake is baking, prepare frosting.
- Melt butter in a small saucepan.
- Add brown sugar and 1/3 cup cream; cook over medium-low heat until sugar is dissolved, about 2 minutes.
- Remove from heat and add vanilla; transfer to a large bowl.
- Using a hand mixer, beat in confectioners sugar a little at a time until smooth.
- (If frosting is to thick, add 1 tablespoon heavy cream at a time until consistency is right).
- Sandwich 2 layers of cake with frosting; frost outside of the cake.
- Press chopped walnuts on sides of cake, if desired.
SUGARLESS BANANA WALNUT CAKE
I enjoy this delicious cake with ice cream or whipped cream, but it's great all by itself. It's moist and has a refreshing banana flavor!

- In a bowl, toss walnuts with 1/4 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well., Combine the baking powder, salt and remaining flour; add to the creamed mixture alternately with milk.
