Reese Witherspoons Crock Pot Coq Au Vin image

Steps:

  • Cook the bacon in a large skillet over med/high heat until crisp.Using a slotted spoon, transfer it to a 4 to 6 quart crockpot. Add the chicken to the skillet and brown all over on med high heat. Transfer to crockpot.
  • Pour the wine into the skillet and scrape up any brown bits; add to the cooker, along with the mushrooms, onions,garlic, rosemary and salt.
  • Cover and cook on low heat for 6 hours or on high for 3 hours.
  • Transfer the chicken, bacon and vegetables to a platter, keep warm.
  • Pour the sauce into a small saucepan.
  • combine the water and cornstarch, stir into the sauce and heat to boiling, stirring constantly, until the sauce thickens ,about 5 minutes.
  • Pour over chicken and serve.

Steps:

  • Heat a large skillet over medium-high heat. Add the bacon and green onions and cook until the bacon is crisp; drain. Brown chicken well in skillet; remove.
  • Layer the onion, mushroom and garlic in a crock-pot. Add the chicken, bacon mixture, salt, pepper, thyme and chicken broth.
  • Cook on low for 6 hours. Add the wine in the last hour of cooking.

There's another recipe of hers on 'Zaar that was apparently from Ellen Degeneres' website but for some reason this one is slightly different. I'm posting it here so I won't misplace it.

Steps:

  • In 12-inch skillet, cook bacon on medium. With slotted spoon, transfer bacon to 4 1/2- to 6-quart slow cooker bowl. Pour off all but 1 tablespoon fat from skillet; add chicken and brown on medium-high. Pour off fat.
  • Add mushrooms, onions, and garlic to slow cooker; top with chicken. Add wine, rosemary, and salt to skillet; heat to boiling. Pour over chicken.
  • Cover slow cooker; cook on low 6 hours, until chicken is thoroughly cooked. Transfer chicken and vegetables to platter; keep warm.
  • Pour sauce into saucepan. In cup, blend water and cornstarch; stir into sauce. Heat until sauce thickens and boils, stirring constantly. Boil sauce 1 minute; pour over chicken.
