EMERALD ISLE
Steps:
- For the sour mix: Combine the lemon juice and Simple Syrup in a glass and stir together.
- For the emerald isle: Fill a cocktail shaker halfway with ice. Add the vodka, rum, Irish whiskey, blue curacao, 3/4 ounce of the sour mix and the orange juice. Shake once and strain into a Collins glass filled with ice. Garnish with the lime wedge.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator.

- In a small bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with the milk. Beat until smooth. Spread into a greased 9-in. square baking pan. , Bake at 350° for 40 minutes or until a toothpick inserted in the center of the cake comes out clean. For glaze, combine confectioners' sugar and milk or whiskey until smooth and fairly thin. If desired, stir in 1 to 2 drops food coloring until blended. Spread glaze over warm cake. Sprinkle with almonds if desired.

- Grate the potatoes directly onto a lint-free clean kitchen towel & add salt. Over a sink or lrg bowl, close & twist the towel tightly. This should drain the liquid from the potatoes. (If you don't have a lint-free towel, sprinkle the potatoes w1 tsp salt, place in a fine-mesh sieve, weigh down & drain for 30 min over a bowl.).
- Place the potato, pork, onion, parsley, thyme, hot sauce, salt & pepper in a food processor. Pulse to grind into a sausage mixture. If you don't have a processor, finely chop the onion & parsley. Then mix in everything else w/your hands.
- Heat oil in a lrg non-stick skillet over med heat. When the oil is hot, form mixture into patties 3 in wide & 1/2-in thick. Set into skillet & cook 6-7 min on ea side. They should be golden brown in color when finished. Drain on a paper towel-lined plate. Serve warm w/maple syrup as desired.

- Combine flour, baking powder and salt; set aside. In a bowl, whip cream until soft peaks form; gradually fold in sugar. Combine water and extract; add alternately with flour mixture to cream mixture, gently folding ingredients together after each addition just until combined. Fold in egg whites. Spread into a greased and waxed paper-lined 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until cake tests done and is very lightly browned. Cool on a rack for 10 minutes. Remove from pan; cool completely. With fork, break cake into 1-1/4-to 1-1/2-in. pieces; set aside. For icing, mix sugar, half-and-half cream, salt and sherry until smooth. If icing is too thin, add additional sugar; if it's too thick, stir in more half-and-half cream. To frost, spear each cake cube with a fork; hold over bowl of icing and spoon icing over cake, coating all sides. Excess icing will drip back into bowl. Dip frosted cake cubes into peanuts; place on wire rack.

BLARNEY BREAKFAST BAKE
Steps:
- Preheat oven to 325°. In a large skillet, cook sausage, mushrooms and onion over medium heat until meat is no longer pink; drain. In a large bowl, whisk the eggs, milk, mustard, salt and pepper. , In a greased 13x9-in. baking dish, layer half the bread cubes, tomatoes, cheeses and sausage mixture. Repeat layers. Pour egg mixture over the top. , Bake, uncovered, 50-55 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

Steps:
- Preheat oven to 300 degrees.
- Sieve Flour, baking soda & spices into a bowl.
- Beat butter and sugar together until light and fluffy.
- Add eggs one at a time and continue to beat.
- Fold in Flour Mixture, raisins, Mixed peel, Almonds and Mixed Fruit.
- Add Guinness & Mix well.
- Turn in to a greased and floured 8 inch round cake pan or 8x8 square pan.
- Bake in the center of oven ( 300°F) for 120 minutes, checking cake at intervals after 90 minutes; cover if neccessary to prevent overbrowning.
- It's done when a wooden pick inserted in the middle comes out clean.
- Let cake cool a little in pan then turn onto a wire rack.

- In a lrg saucepan, combine milk & water until simmering. Remove from heat & add tea bags. Allow to steep for 5-10 minutes.
- While the teabags are steeping, toast the oats. In a skillet set over low-heat, add 1 ½ tbsp of butter. When butter stops foaming, add the oatmeal. Stir until butter & oatmeal are well-combined. When oatmeal is toasted & smells rich & nutty, remove from heat.
- Remove the tea bags from the saucepan. Place on med-heat & return to a boil. Add oatmeal to the saucepan. Turn down to low-heat. Sprinkle in lemon zest & sweeten with honey to taste. Allow to cook until the oatmeal is thick & creamy. Serve warm, topped w/fruit, nuts or more honey. Thin w/milk as desired.
