Steps:
- Preheat the oven to 350 degrees F. Combine the lettuce, onion and tomatoes in a large bowl; set aside.
- Meanwhile, cut the bread into crouton-size cubes. Melt the butter in a skillet over medium heat. Add the bread cubes and toast, tossing, until golden, about 6 minutes. Set aside to cool.
- Make the bacon: Mix the brown sugar, paprika, lemon zest and crushed pepper in a small bowl. Add the bacon and press to coat on both sides. Line a baking sheet with parchment paper; place the thyme sprigs on the parchment paper, then lay a strip of bacon on top of each sprig. Bake until the bacon is caramelized and crisp, about 20 minutes. Let cool slightly on the baking sheet. Cut the bacon into bite-size bits using scissors; add to the bowl with the lettuce. Discard the thyme.
- Make the dressing: Whisk the mayonnaise, syrup, mustard and lemon juice in a medium bowl. Add the dressing to the salad and toss. (This is enough dressing for the whole salad, but you can use less if you want a less wet salad.) Sprinkle the croutons on top and eat.

Transfer croutons to paper towels to drain and cool.
- In a small bowl whisk together garlic, lemon juice, mayonnaise, water, and salt and pepper to taste. Slice onion and halve tomatoes. Tear lettuce into bite-size pieces.
- In a large bowl toss together onion, tomatoes, lettuce, half of bacon and croutons, salt and pepper to taste, and enough dressing to coat.
- Divide salad between 2 plates and top with remaining croutons and bacon.
BLT CHEESE CUPS
Chewy cheese cups hold crisp lettuce, salty bacon, and fresh tomato in this low-carb version of a BLT. The cheese cups are chewy in a good way, like the browned edges of cheese pizza or lasagna that gets stuck to the pan.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Arrange 3 tablespoons Cheddar cheese in a 4-inch circle on the prepared baking sheet. Repeat to make 1 more circle.
- Bake in the preheated oven for 6 minutes. Remove from the oven and let stand for 1 to 2 minutes.
- Turn a muffin tip upside-down. Invert the parchment paper over the muffin tin and line one cheese circle up with one muffin cup. Slowly peel the parchment back from the cheese circle, using an offset spatula or small knife to release the cheese from the paper. Form the cheese around the muffin cup and hold it for 5 seconds to help mold into a cup shape. Repeat the process with the remaining cheese circle.
- Make 2 more cheese cups with remaining cheese by following the same process.
- Toss lettuce, tomato, and bacon together in a small bowl to combine; divide mixture evenly among cheese cups.
- Stir mayonnaise and chives together in a small bowl and divide evenly between cheese cups. Season with salt and pepper.

BLT SALAD (IT TASTES LIKE A SANDWICH)
This recipe comes from the Six Sisters. It does not disappoint. There are a lot of BLT salads out there but this one is different. If you have a bite of the bacon, lettuce, tomato and the dressing followed by a bit of crouton and cheese you will feel like you are eating a sandwich. It is so delicious. You must mix it all to have the effect. If you just taste the dressing you may feel like it is just a sweet dressing and if you taste the salad you may feel like it is just a salad with bacon but together....magic. We often need to double this recipe to feed our family as a main meal as we love salad. Enjoy! ChefDLH
