SMOKED ALMONDS
These taste like the real smokehouse almonds you buy in the store for a huge price. I made these last Christmas for a bazaar and just found the recipe again. They are good even in the middle of summer. I have also used a combination of mixed nuts and they are still good.

Steps:
- Pour cooking oil over almonds in bowl.
- Toss to coat well.
- Spread on ungreased baking sheet.
- Bake in 275 degree oven for 45 minutes.
- Remove from oven.
- Pour nuts into medium bowl.
- Sprinkle with liquid smoke.
- Toss to coat well.
- Mix flour and salt in cup.
- Sprinkle over almonds.
- Toss to coat well.
- Spread on same baking sheet.
- Bake for 20 minutes.
- Cool.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Prepare a bread pan with cooking spray.
- Mix eggs and vinegar together in a bowl; add bananas, coconut oil, honey, and vanilla extract and stir until blended.
- Sift flour, cinnamon, baking powder, nutmeg and salt together in a large bowl; stir into banana mixture until well blended. Pour batter into prepared bread pan.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This classic banana bread has great flavor and texture with the addition of Almond Breeze Almondmilk and a bit of almond flour.

- Preheat oven to 350 degrees F and coat 2 mini loaf pans with nonstick spray.
- Whisk together bananas, sugar, Almond Breeze, oil, extract, and egg in a large bowl. Stir together dry ingredients and add to banana mixture, stirring just until dry ingredients are incorporated.
- Spoon equal amounts into prepared pans and bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let cool before removing from pans. Makes 8 servings.
BLUE DIAMOND BANANA NUT BREAD WITH ALMONDS
This is a recipe of my 82 year old mother in laws and she has made for decades from a newspaper clipping that is now tattered and torn but she knows from heart now .The original recipe does not call for an egg but she adds one " because I just thought it should have one . It is full of flavor and the consistency is perfect. I love it. I have never made it with almonds and neither does she and most of the time I make it with no nuts at all. I dont think this recipe is an uncommon one but it is a consistently good one.

- grease and flour 2 small loaf pans or one large (meatloaf size).

- Preheat the oven to 375 degrees F. Butter a loaf pan and set aside.
- In a bowl, sift together the flour, baking soda, salt, and flax seeds.
- In another bowl, mix the butter, sugar, eggs, and vanilla until creamy. Add the orange zest and juice and stir lightly.
- Slowly fold the flour mixture into the wet ingredients until combined, then add the nuts and banana, mixing until just combined. Try not to over mix.
- Pour into greased loaf pan and bake for 1 hour, or until toothpick inserted into middle of loaf comes out clean.
- Allow bread to cool in the pan for 10 minutes before transferring to rack. Cool completely before glazing.
- FOR THE GLAZE: Combine the confectioner's sugar and orange and/or lemon juice. Stir until smooth. Pour over cooled bread.
