Grandma's Unbreaded Fried Chicken image

Steps:

  • 1. Cook bacon in skillet or heat cooking oil. Oil will spit when you drop water in it when hot enough. (My Grandma only used bacon fat, that was her frying oil of choice, It does add to the flavor of the chicken.)
  • 2. Salt and pepper your chicken to taste. When your oil is hot enough, carefully place the chicken in the pan bottom side down.
  • 3. Cover and simmer on medium-ish heat for 15 min.
  • 4. Using TONGS turn chicken. Recover and continue to cook for 15 min more.
  • 5. Check the meat if the meat has started to pull away from the leg bone raise the heat a little and cook uncovered, rearrange the meat according to the heat in your pan. If meat is not pulling away continue to cook covered on medium-ish heat. After you uncover and raise the heat, turn every 10ish minutes, cooking till meat is cooked thru and the skin is golden brown and crispy. Remove from pan and keep warm.
  • 6. Make your gravy using the pan drippings.
  • 7. Serve warm or cold. This makes the best cold picnic chicken.

BROOKLYN BOWL FRIED CHICKEN

This fried chicken is a specialty of Eric and Bruce Bromberg's SoHo restaurant Blue Ribbon and many of its offspring, including Brooklyn Bowl, the bowling alley in Williamsburg, Brooklyn. It is famous, and it is crunchy. And, as long as you are not afraid of having a three-inch-deep lake of hot oil in your kitchen, it is preposterously simple to make at home. No three-day buttermilk bath, or lard seasoned with bacon - just a quick crust of egg whites and matzo crumbs that the Bromberg brothers ought to patent. You sprinkle it with a sort-of-Cajun spice mix and send it to the table with pots of honey, if you are a restaurant, or, at home, with a bear-shaped squeeze bottle. The spice mix, all of which you will likely have in your pantry, comes together in two minutes.

Brooklyn Bowl Fried Chicken image

Steps:

  • Fill a large pot with oil to a depth of about 3 inches. Heat the oil over medium-high heat until a deep-fat thermometer reads 375 degrees.
  • Meanwhile, whisk the egg whites in a large, shallow bowl. In a separate shallow bowl, combine the matzo meal and flour. Keeping the dark meat and the white separate, dip each chicken piece in egg white and let excess drip back into the bowl. Then roll each chicken piece in the matzo mix, and tap off excess.
  • Carefully lower the chicken thighs and drumsticks into the oil. After 3 minutes, carefully add the breast pieces. (Keep the oil at 375 by adjusting heat as necessary.) Fry until dark gold, about 10 minutes more. Transfer the fried chicken to a paper-towel-lined plate. Sprinkle immediately with salt and pepper, then coat the pieces with the Cajun seasoning. Serve the chicken with honey, for dipping.

Vegetable oil, for frying
4 large egg whites
1/2 cup matzo meal, or matzo crackers crushed with a rolling pin
1/2 cup all-purpose flour
1 medium chicken (about 3 pounds), cut into eight pieces (2 legs, 2 thighs, 4 breast pieces; save wings for stock)
Fine sea salt
freshly ground black and white pepper
1 teaspoon Cajun seasoning (see recipe)
Honey, for serving

  • 1. Combine all of the ingredients for the brine in a large pot; add the chicken thighs and refrigerate for at least two to three hours or overnight.
  • 2. Remove the chicken thighs from the brine and pat dry with a paper towel.
  • 3. Heat a large frying pan with 2 tablespoons of olive oil. Add the chicken thighs. Do not overcrowd the pan. The chicken will not get a beautiful golden color if you do.
  • 4. When one side is golden gently turn over and cook on the other side.
  • 5. Cooking time should take about 40-45 minutes on the stove-top or you may bake the chicken with a drizzle of olive oil at 350 degrees for about 40-45 minutes.

8 chicken thighs

for the brine:
4 cups water
3 tbs. salt
1 tbs. ground black pepper
2 bay leaves
2 cloves garlic
1 tsp. paprika
1 tbs. lemon juice
1 tsp. vinegar

Steps:

  • 1. To make the brine: Stir Kosher salt into water until dissolved. Place chicken parts in a nonreactive bowl or pot; add enough brine to cover completely. Refrigerate up to 8 hours. Drain the brined chicken and rinse out the bowl it brine was in.
  • 2. Return the chicken to the bowl. Add beaten egg to the buttermilk. Pour buttermilk over chicken. Cover and refrigerate for another four hours.
  • 3. Meanwhile, prepare the oil for frying by putting oil and butter in a pan (I prefer a deep fryer). Cook over low heat for 30 minutes, skimming as needed until the butter ceases to throw off foam. Just before frying, increase the temperature to medium-high.
  • 4. In another bowl mix all dry ingredients.
  • 5. Roll chicken in dry ingredients. Begin to fry. Do not overcrowd the pan or the cooking oil will cool.
  • 6. Using tongs, slip some of the chicken pieces, skin side down, into the heated fat until chicken is golden brown. Drain on a wire rack or crumpled paper towels and serve.
