BLUEBERRY OATMEAL BREAD

This healthy bread is moist and bursting with fresh blueberries. Wonderful for breakfast or an anytime of the day snack.

Blueberry Oatmeal Bread image

Steps:

  • Heat oven to 350 degrees. Grease bottom only of 9x5 inch loaf pan.
  • Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, rolled oats, sugar, baking powder, baking soda and salt; mix well.
  • In small bowl, combine milk, oil, vanilla, lemon peel and eggs; blend well. Add to dry ingredients; stir just until dry ingredients are moistened.
  • Gently fold in blueberries. Pour into greased pan.
  • Bake at 350 for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

Oatmeal is a great way to start the day and this is a recipe I have developed over the years. It's delicious, light, and great with milk to help cool it down. You can replace the milk with soy milk, if desired. You can add the blueberries earlier in the cooking process if you like them hotter and plumper.

Steps:

  • Combine water and salt together in a saucepan; bring to a boil. Add oats; cook and stir until halfway tender, 2 to 3 minutes. Stir flax, brown sugar, cinnamon, and vanilla extract into oatmeal; continue cooking until oats are tender, water is boiled off, and desired cereal consistency is reached, 2 to 3 minutes more. Stir milk and blueberries into oatmeal.

Steps:

  • Preheat oven to 350 degrees. Grease and flour a loaf pan.
  • In a large bowl mix flour, sugar, salt, baking powder, and oats.
  • In a medium bowl, mash the bananas. Beat in the eggs and oil. Add to dry ingredients and mix to combine. Fold in nuts and blueberries.
  • Pour batter into the prepared loaf pan. Bake at 350 degrees for 1 hour. Cool in the pan for about 10 minutes, then remove and cool on a wire rack.

  • Heat oven to 350.

Steps:

  • Cream shortening and sugar till fluffy.
  • Add eggs one at a time, mixing well.
  • Stir in banana.
  • Combine remaining ingredients, stirring gently.
  • Add dry ingredients to wet ingredients, mixing just until moistened.
  • Turn into a greased and floured loaf pan.
  • Bake at 350*F for 50-55 minutes until toothpick comes out clean.
