GRILLED BRIE AND PEAR SANDWICH

This grilled Brie and pear sandwich is dedicated to National Grilled Cheese Sandwich Day, which happens every April 12, thanks mostly to bored food bloggers and cheese-industry marketing cartels. I'm looking at you, Wisconsin.

Grilled Brie and Pear Sandwich image

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

  • Toss cheeses together in a small bowl; set aside.
  • Place bread slices on a work surface.
  • Spread 1 teaspoon of the butter on each of 4 bread slices; set aside.
  • Arrange pear slices evenly on the unbuttered slices.
  • Top with the cheese; top with the greens, then the buttered slice of bread.
  • Heat remaining 2 tablespoons of the butter in a skillet over medium heat, or prepare a panini pan.
  • Add sandwiches to pan; heat, turning once, pressing with a spatula to flatten, until cheese melts and bread browns, about 3 minutes per side.

Steps:

  • Melt 1 tbsp butter in a small frying pan over medium heat.
  • Add the onion, seasoning with salt and pepper and cook until carmelized and set aside. (Be sure to stir occasionally. This takes about 15 minutes.).
  • In assembly line fashion, put cheese, onions, and pear slices on 4 slices of bread and top with the remaining 4 slices.
  • Heat a frying pan to medium-low heat and melt 1 tbsp butter.
  • Add the sandwiches and grill until the bread is toasted and the cheese is melted.
  • Flip the sandwiches to toast the other side.
