BOOZY BANANA BREAD

Banana bread at its best. Lots of bananas and a hint of almond and almond liqueur make a delicious banana bread--I love it served with butter.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Whisk flour, salt, and baking soda together in a bowl.
  • Mix bananas, brown sugar, butter, eggs, almond extract, and amaretto together in a separate bowl. Add flour mixture; mix just until flour is incorporated, about 1 minute. Transfer mixture to the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Let cool before serving, about 30 minutes.

A nice alternative to traditional bread pudding. I'm not a huge fan of bread pudding but this was good. I think that coconut rum would be wonderful in this dish.

Steps:

  • Cut the bread into cubes, place in a bowl and pour the milk on it, put aside for an hour.
  • Preheat oven to 325 degrees F.
  • Grease 9 x 13 inch baking dish.
  • In a separate bowl mix the eggs, sugar and vanilla essence.
  • Pour this mixture onto the bread mixture.
  • Next add the mashed bananas and raisins.
  • Now add the rum, cinnamom and ground nutmeg.
  • Pour this mixture into the prepared baking dish and bake in the oven for 1 hour.
  • Let cool before serving.

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
  • Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

Steps:

  • Mix condensed milk, pudding, water and vodka together. Chill for approximately 5 minutes. Fold in the whipped cream. Next layer in serving dish vanilla wafers, pudding, bananas. Repeat layers till bowl is filled. (I did 3 layers). Finish off with the pudding on top. Chill for a couple of hours and serve with additional whipped cream if desired.
  • For stronger pudding mix switch out equal amounts of vodka for water. You can also use the flavored whipped cream.

  • In a small saucepan place dates and rum. Bring to a slow simmer and continue to cook until most of the dates have absorbed most of the rum. It will resemble a boozy date jam. Set aside to cool.
  • In a large bowl place butter and microwave until melted. Remove from microwave and add sugar beat until blended. Beat in eggs one at a time and then add mashed bananas and date mixture. Sift in flour baking powder, bicarb and salt. Mix until combined.

  • In a medium skillet add the ripe mashed bananas, butter, brown sugar, and rum. Cook and whisk banana mixture over medium heat until butter melts and it begins to simmer. Turn the heat down to very low and let simmer for 3-5 minutes. Remove from heat and let slightly cool. It does not have to cool all the way down, but just so it is not super hot.
  • In a large bowl, combine the eggs, oil, whole milk and vanilla extract. Add the cooled down banana mixture to this and whisk together.
