PRIZE WINNING MARINADE FOR BEEF
I combined my sister-in-law's marinade recipe with my friend's barbecue cooking method. I then submitted this recipe into to a radio station as part of a contest and I ended up winning the grand prize of a Jenairre stove! It's so versatile that it works both with cheap cuts of beef and expensive too. I won't cook beef roast any other way. Enjoy!

Steps:
- Using a food processor, crush peppercorns until fine.
- Add garlic to processor and crush.
- Add soy sauce, Worcestershire sauce and lemon juice and blend.
- Pour mixture into giant zip lock freezer bag and add the meat to be marinated (even the cheapest cuts of beef will taste like prime rib!).
- Seal bag.
- Refrigerate for 48 hours (turn bag every time you open the fridge door).
- Reserve the marinade for later use.
- Barbecue the meat as you would normally however, I prefer to cook the meat very VERY slowly using an indirect cooking method--only ONE side of the barbecue is lit and turned down to low.
- The meat is placed on the one side of the barbecue which is off, over a pan of water, which sits on the barbecue rocks.
- Note: Total barbecue time depends on the size of beef roast.
- Relax while your dinner cooks.
- Put marinade on the stove and bring to a boil.
- Add just enough marinade to some sour cream, to make a sauce to drizzle over the cooked meat.
- Sit back and enjoy the compliments.

Steps:
- For the balsamic marinated roast beef: Put the balsamic vinegar, chopped garlic and black pepper in a small saute pan over medium to high heat and reduce for 1 to 2 minutes. Remove the pan from the heat, stir in the chopped rosemary and olive oil, and allow the mixture to cool.
- Put the marinade in a baking pan, put the beef in the pan and coat with hands. Put in the refrigerator to marinate for a minimum of 30 minutes, maximum 24 hours.
- Preheat the oven to 350 degrees F and remove the marinated beef from the refrigerator. Put the beef in the oven and roast for approximately 45 minutes to 1 hour, until cooked to medium-rare and an instant thermometer inserted in the center of the roast has an internal temperature between 130 and 140 degrees F.
- Remove the beef from the oven and allow the beef to rest before slicing.
- For the mashed potatoes: Cook the potatoes in enough heavily salted water to cover, until tender. Drain the potatoes, reserving 3 tablespoons of the water. Put the potatoes back into the hot pot and using a potato ricer, rice the potatoes or mash.
- Put the butter, olive oil, and reserved potato water in the pot with the potatoes. Season the potatoes with salt. Gently fold the ingredients together until incorporated. Taste and adjust seasoning, if necessary.
- For the baked camembert and herb oil: Preheat the oven to 350 degrees F and line a baking dish or oven-proof saute pan with parchment paper.
- Put the thyme, marjoram, rosemary, black pepper, and olive oil in a bowl and mix to incorporate.
- Put the bottom half of the Camembert on parchment paper. Spoon 1 tablespoon herb oil in the center of Camembert, place the top half on top and pour 1 tablespoon herb oil over top. Place the Camembert in the oven until the cheese has melted, approximately 10 minutes.
- For the sauteed mushrooms: Put the remaining herb oil and butter in a saute pan over medium-high heat. Put the mushrooms in the hot pan and saute until slightly caramelized. Season with salt and pepper, and then remove from the heat.
- To assemble: To serve, place the roast beef and mashed potatoes on a warm plate and spoon the sauteed mushrooms and baked Camembert over the meat and potatoes.

MARINATED BEEF STIR-FRY
"I love this quick-and-easy stir-fry because everything but the cooking can be done in advance," writes Marian Johnson of Brawley, California. "It's great with sourdough bread and a fresh tomato and cucumber salad. Or, serve it with warm tortillas and hot sauce. The meat is easier to slice into nice even strips if it's partially frozen."

- Mexican Marinade. Although this marinade can be used on any meat or fish for a Mexican-style dish, we think it works wonders on tough cuts of beef. Combine vinegar, fresh cilantro, spices, dried herbs, and garlic, and coat your beef for at least 2 hours.
- Brisket Marinade. Whether you're smoking or grilling a brisket, this marinade will add a lot of flavor and help tenderize the meat. By marinating brisket, you start the crust formation by softening the surface, which helps to promote smoke absorption.
- Guinness Marinade. This classic marinade is full of flavor. Its earthy tone comes courtesy of some Guinness beer. Mix beer, spices, soy sauce, onions, fresh herbs, and salt and let the mixture sit for 30 minutes before using.
- Bulgogi Marinade. This is the traditional marinade recipe for Korean Bulgogi, which is a marinated steak cut into thin strips and served up in lettuce leaves or on rice.
- Beef Rib Marinade. This beef rib marinade makes the most out of your cut of ribs. The acid from the lemon juice and vinegar will increase the tenderness once the ribs are smoked, and the honey and oil will help with the chewy outer crust that's a must for finger-licking ribs.
- Fajita Marinade. This marinade is loaded with the flavors perfect for making fajitas, though you can also use it on carne asada (hanger steak or skirt steak) before grilling it.
- Jamaican Jerk Marinade. Our Jamaican-inspired jerk marinade has all the good flavors that you'd like on a juicy piece of grilled beef. Simply blend fresh herbs, spices, vinegar, and oil and use this paste as your marinade.
- Best Odds Brisket Marinade. Marinating a brisket is the best way to ensure your smoked brisket remains tender and juicy. This marinade will start the tenderization process and work a lot of flavor into the brisket.
- Steak Marinade. This is a quick and easy marinade that works great on steak and thicker cuts of beef. While good quality beef just needs salt and pepper, when you buy less expensive steak you could improve the texture and flavor with a good marinade.
