Steps:
- Cut challah bread in 1-inch thick slices. Allow to sit out for awhile to dry out.
- Heat griddle to 350 degrees F and lightly brush with a butter soaked piece of paper towel.
- Combine eggs, heavy cream, orange zest and juice, cinnamon and ground nutmeg in a shallow wide dish. Dip the slices of bread into the egg mixture allowing it to soak in on both sides. Transfer to each piece to the hot griddle and cook until golden brown on both sides, about 3 minutes per side. Try to flip only once.
- Serve with Orange Bourbon Butter.
- Cream the butter in a mixer. Add the bourbon and orange zest and mix well. Leave at room temperature and serve with the French toast.

- Mix together all ingredients except bread slices. Dip bread in the egg mixture, coating both sides. Place on heated griddle and cook until golden. Turn and cook opposite side until golden. Serve immediately with your favorite topping.
- Suggested toppings: Maple syrup and bananas, strawberry sauce or syrup and try Great Harvest low-fat granola sprinkled on top.

- Preheat oven to 325 degrees F.
- Spread the pecans on a cookie sheet, and place in the oven for 3 minutes. For even toasting, turn the tray, front to back. Toss the nuts with a metal spatula and bake for another 3 minutes. You'll know they're done when they give off their fragrant aroma, and be sure to check them so they don't become overbaked or charred.
- In a food processor, chop the vanilla wafers into crumbs. Add the pecans and process just until they are finely chopped. In a medium bowl, mix together the crumb-pecan mixture, 1/4 cup of the cocoa, and 1/4 cup of the confectioners' sugar. Add the corn syrup and bourbon. Mix thoroughly. Sift the remaining 1/4 cup cocoa and 1/4 cup confectioners' sugar onto a large plate. Form the crumb mixture into 3/4-inch balls and roll them through the cocoa-sugar to coat. Store in a sealed container for up to 5 days. If necessary, touch them up with a light dusting of the remaining confectioners' sugar.
BLACKBERRY FRENCH TOAST

- Preheat oven to 300 degrees F.
- Spread the bread slices on a baking sheet and turn off the oven. Place the sheet in the oven and leave it overnight until the bread is dried.
- Preheat the oven to 300 degrees F.
- In a large bowl, whisk the eggs and 1/4 cup sugar until all yolks are broken, and then add the milk and cream. Put the dried bread pieces on top of the egg mixture. Wait a few minutes, and then push the rest of the bread into the mixture and mix lightly. Place a small or medium casserole dish on a baking sheet that is lined with foil. Brush the dish with some of the melted butter.
- Put half of the bread mixture in the dish to make a layer that covers the bottom. With a slotted spoon, arrange the berries evenly over the bread layer. Sprinkle the berries with sugar. Using your hands, pull out the remaining bread and create a second layer, arranging it evenly and patting down any crusts. With a spatula, stir the remaining egg mixture and pour over the top bread layer. Using a flat pastry brush, lightly brush the rest of the melted butter over the top. Bake the French toast until it rises up about 1-inch on the sides, about 1 hour. Let it cool for about 10 minutes, then cut into servings and serve immediately with sausage patties and fresh fruit.
BOURBON FRENCH TOAST
If you have ever visited New Orleans and been served french toast.. this is it..They are sinfully good.. For those who chose the non bourbon recipe you can use rum extract in water for the bourbon.. Honestly try it with it first.. I have made this with Windsor, Jameson and Jim Beam. I prefer the Windsor version better as it is sweeter then the others and doesn't have a big bite to it. Even though it is a Canadian whiskey instead of a good rye. That is my preference though.

Steps:
- mix eggs, sugar, salt and bourbon, saving 1/2 cup of bourbon.
- Cut bread into half inch slices and dip into mixture.
- Place into frying pan coated with oil. Or griddle at 350 degrees.
- Fry until crisp and brown, repeating on the opposite side until done.
- Drain on paper towels.
- Dust with powdered sugar.
- Add 1/2 cup of bourbon to maple syrup and serve warm.

This is very rich and delicious and is perfect for impressing your company. I love it, but usually scale it down quite a bit since it's just me. It's in my B&B arsenal.

- To make sauce: In a small pan, melt butter and brown sugar over medium heat; carefully add bananas and simmer for 2 minutes. Remove from stove and add bourbon; return to flame and continue simmering an additional 2 minutes. Cover and keep warm until ready to use.
- To make batter: In a large bowl, whisk eggs and salt. Add vanilla. Pour in cream, continuing to whisk until well blended.
- Melt 1 to 2 tablespoons butter in a large frying pan over medium-high heat. Dip each bread slice in batter and cook each side until golden brown. Repeat with remaining bread slices.
- Transfer 2 bread slices to individual plates and top with banana slices and sauce. Serve with maple syrup or powdered sugar.
