BOURBON CHICKEN
A favorite named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient; although this dish, sold as Cajun-style cuisine in malls all over America, is reported to be nothing of the kind (not genuine Creole or Cajun fare)! Note: If you double the recipe, make sure that the chicken is still in a single layer. Laissez les bons temps rouler!

Steps:
- Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

These are the best baked beans--very tasty. Very easy to make as well--can be made on the stove top, in the oven, or in a crock pot. I never fail to get rave reviews at pot lucks and family outings.

- To make the coffee, dissolve 1 tsp of instant coffee in 1/2 cup of hot water.
- Combine all ingredients in pot and cook over low heat for 2 hours, or put in covered baking dish and bake at 350°F for 2 hours, or put in crock pot on high for 3-4 hours.

Steps:
- Cook diced bacon in a 3-qt saucepan over medium-high heat until crisp, stirring occasionally. With slotted spoon, remove bacon to plate.
- Add onion and garlic to skillet. Cook until softened, about 5 minutes, stirring frequently.
- Stir in rice; cook 2 minutes, stirring constantly.
- Add broth, Tabasco sauce and salt. Bring to boil over high heat. Reduce heat to low; cover and simmer 15 minutes.
- Add red and yellow bell peppers, red beans and bacon. Cover; cook 5 minutes longer or until rice is tender.
- Stir in green onions and serve.
