BROCCOLI WITH BOW TIES AND PEAS
Steps:
- Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
- In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli with the peas.
- In a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Add 1 1/2 teaspoons salt, the pepper, and the lemon juice and pour the mixture over the vegetables and pasta. Toss well. Sprinkle with the cheese and pignolis and toss again.

- Heat oven to 425 degrees.
- Cook pasta in a large pot according to package directions.
- Drain.
- Put pasta into a casserole dish.
- Add chicken, peas, soup, milk, rosemary, and pepper.
- Mix thoroughly but gently.
- Sprinkle with parmesan.
- Bake for 10 minutes, or until heated through and cheese is lightly browned.
CHICKEN OVER BOW TIES
Steps:
- Clean cutlets and cut into cubes. Dredge them in flour, egg and flour, brown in frying pan with olive oil and butter. As they come out of pan let them rest on paper towels to absorb oil. When all the chicken has been browned, put all chicken back into the same pan without cleaning add garlic, Italian seasoning, marsala, chicken broth, mushrooms, and tomatoes. Cover and bring to a boil, then simmer, for at least 10 to 2 minutes, then add peas and cook until peas are cooked. Serve over bow tie pasta.
BOW TIES WITH SAUSAGE AND LEEK SAUCE
Steps:
- Bring the salted water to a boil.
- Meanwhile, prepare the leeks: Cut off and discard the top third of the rough green portion and the root ends. Remove any brown or wilted outer layers. Slice the remaining green and white parts into 1/2-inch thick rounds. Rinse the leek slices in several changes of cold water, swishing them around to remove all soil and grit.
- In a large skillet, heat the olive oil over medium heat. Crumble the sausage meat into the skillet and cook, breaking up the lumps, until golden, about 5 minutes. Add the leeks to the skillet and cook, stirring, until wilted, about 5 minutes. Stir in the shallots and cook for 1 minute. Add 1 tablespoon of the butter, the peas, and stock. Heat to a boil, reduce the heat to medium-low, and simmer gently for 5 minutes. Season with salt and pepper, cover the skillet, and set aside.
- Meanwhile, stir the bow ties into the boiling water. When the water returns to a boil, uncover the pot. Cook the pasta, stirring occasionally, until al dente -- tender, but firm -- about 12 minutes. Drain the bow ties well and return them to a pot over low heat.
- Add the sausage and leek sauce to the pasta and toss well until the pasta is coated. Remove the pot from the heat, add the remaining 1 tablespoon butter and the grated cheese, and toss well. Transfer to a warmed serving platter or individual bowls. Serve immediately, passing additional grated cheese on the side, if you like.
MICHAEL'S BOW TIE CHICKEN PASTA
Steps:
- For the marinated chicken: Combine the teriyaki sauce, brown sugar, mushroom soy, garlic, sesame oil and ginger in a medium bowl. Add the chicken, toss to coat and marinate in the refrigerator for at least 30 minutes. Remove and season with salt and pepper.
- Preheat the oven to 350 degrees F.
- Using a grill or grill pan, sear the chicken over high heat until color begins to show, 1 to 2 minutes per side. Remove and roast in the oven until moist, tender and cooked through, about 10 minutes.
- Cut the chicken into medium-diced sections for the pasta.
- For the pasta: Cook the pasta according to the package directions until al dente; reserve the pasta and the water in the pot separately.
- Heat the blended oil in saute pan over medium heat. Add the pancetta and then the garlic and saute until the garlic is golden brown, about 3 minutes.
- Add the mushrooms, cut-up marinated chicken and sundried tomatoes and cook for about 1 minute, then add the wine and deglaze the pan.
- Add the cream, then 3 ounces of the Parmesan and cook until thickened. As the sauce thickens, immerse the pasta in boiling water for 15 seconds to heat, strain and then add to saute pan. Saute until all the ingredients are thoroughly combined.
- Season to taste with salt and pepper then place in a pasta serving bowl. Garnish with the snow peas and sprinkle with the remaining 1 ounce Parmesan.

This healthy dinner is easy to make and very yummy! I like to add whatever extra veggies I have on hand to change it up. My husband is a picky eater with vegetables but he loves this dish! - Start boiling water for pasta. Cook bowtie pasta until just al dente.

I got this recipe from a set of recipe cards and it is one of the favorites in my house. I admit that I never follow this 100% (I don't add the onions, and I don't exactly measure the cheese and spices) but I will print the exact recipe here.

- Preheat the oven to 350°F Start cooking pasta according to directions and drain. While pasta is cooking --.
- Cut chicken into strips, bites, or pieces. Sprinkle with salt and pepper.
- Heat oil in large skillet over medium heat.
- Add the chicken to skillet and cook until no longer pink, about 6 minutes. Remove chicken from skillet with a slotted spoon and set aside.
- Add onion and garlic to skillet and cook until onion is softened (I'm not sure how long -- I never use onion) Stir in pasta sauce and increase heat to high. Bring sauce to a boil, reduce heat to medium low and simmer for 5 minutes.
- Add the chicken, cream and basil to the skillet and mix well.
- Spoon cooked pasta into an ungreased 13 X 9 baking pan. Spoon the pasta sauce mixture (with chicken) over the top. Sprinkle with the cheeses. Bake about 25 minutes, until bubbly and cheese is lightly browned.
