CHEERY CHERRY LOAF
You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home. I have also entered my loaf in fairs, where it's always a winner. I'm a widow (three grown daughters) who enjoys baking and crafting.

Steps:
- Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup. Cut up cherries; set cherries and liquid aside. , In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, butter and cherry liquid; stir into dry ingredients just until combined. Fold in the red and green cherries, pecans and orange zest. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.

MARASCHINO CHERRY MINI LOAVES
I've been making these breads as Christmas gifts for my neighbors for more than 20 years. Each moist slice is dotted with cherries, chocolate and nuts.

Steps:
- Drain cherries, reserving 1/4 cup juice; set aside. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk eggs and reserved juice; stir into dry ingredients just until moistened. Fold in the walnuts, chocolate chips, dates and cherries., Spoon into three greased 5-3/4x3x2-in. loaf pans. Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely. Wrap and store for 24 hours before serving.

CHERRY LOAF CAKE
Make this moreish cherry cake for afternoon tea or a coffee morning. Made with sweet glacé cherries and crunchy almonds, it won't last long

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line with baking parchment. Beat the butter and sugar together until pale and fluffy, then beat in the eggs one at a time, followed by the vanilla and almond extract (if using).
- Toss the cherries with 2 tbsp of the flour in a bowl. Tip the rest of the flour, the ground almonds, baking powder and a pinch of salt into the bowl with the sugar and eggs, and mix until just combined. Fold in the cherries and any remaining flour in the bowl. Spoon into the prepared tin and smooth over the top.
- Bake for 50-55 mins, or until a skewer inserted in the middle comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Serve as it is, or mix the icing sugar with the extract and enough milk to make a thick but pourable consistency. Drizzle over the loaf cake, and scatter over the flaked almonds to serve.

ALL BRAN LOAF CAKE
This is a fruit loaf cake, using All Bran as the main ingredient.

Steps:
- Grease and line your loaf tin, and preheat the oven to 170C/fan 150C/gas 5.
- Use a cup to measure the ingredients (I use my small measuring jug featured in the photograph.)
- Pour the All bran and milk into a bowl. Leave the All Bran to soak up the milk (about 5-10 mins.)
- Add the self raising flour and sugar to your mixture and stir.
- Cut up your dried fruit (if using prunes and apricots) and dust with some of the self raising flour. Add the fruit to your mixture and stir.
- The mixture should be thick and gloopy, if it isn't you may wish to add a bit more milk. Transfer the mixture to your loaf tin and put in the oven for 1 hr -1 hr 30 mins. Check on the loaf after 1 hr by putting a knife through the middle, if it comes out clean the loaf is cooked, if not leave it in a little longer.
BRAN CHERRY NUT LOAF

- 1. Stir together flour, baking powder, salt, nutmeg and the 3/4 cup sugar. Set aside.2. Measure KELLOGG'S ALL-BRAN cereal and milk into large mixing bowl. Stir to combine. Let stand 2 minutes or until cereal softens 3. Add egg and oi to cereal mixturel. Beat well. Add flour mixture, stirring only until combined. Reserve 2 tablespoons chopped cherries for topping. Fold remaining cherries and the 3/4 cup walnuts into batter. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray. Set aside.4. For topping, measure margarine into small fry pan. Cook over low heat until bubbly. Remove from heat. Stir in the 1/4 cup sugar, the 1/4 cup walnuts and the reserved 2 tablespoons cherries. Sprinkle over batter.5. Bake at 350°F about 1 hour or until wooden pick inserted near center comes out clean. Let cool 10 minutes before removing from pan. Cool completely on wire rack before slicing.

- In a bowl, beat butter and sugar until creamy. Add the egg, almond extract and vanilla while beating. Add cherries and the juices. Beat to combine everything.
