BLUEBERRY-APPLE CRUNCH

This is a quick and delicious recipe to make when blueberries are in season. Since you don't have to turn on the oven, it makes a great summertime dessert.

Blueberry-Apple Crunch image

Steps:

  • Grease a microwave-safe 2-quart casserole dish.
  • Mix flour, brown sugar, oats, graham cracker crumbs, and cinnamon together in a bowl; stir in butter until well mixed. Press 1/2 the oat mixture into the prepared casserole dish. Spread apples and blueberries over oat mixture; drizzle with lemon juice.
  • Stir white sugar and cornstarch together in a microwave-safe bowl; mix in water and vanilla extract until smooth. Heat sugar mixture in the microwave, stirring every 45 seconds, until sauce is thick and nearly clear, 2 to 4 minutes. Pour sauce over fruit layer and sprinkle remaining oat mixture over top.
  • Heat in microwave at 70 percent power until fruit is tender and juice is bubbling, 8 to 10 minutes. Cool slightly before serving.

  • Mix the porridge oats with the cinnamon in a large bowl. Stir in the apple juice and grated apples, then gently fold in the blueberries. Allow to stand for 5 mins before serving, or leave overnight and enjoy for breakfast the next day.

This is from Kraft, a yummy decadent brekky that's quick to do. This could also be a dessert if you like. To cut down on fat a little I have also tried this using cottage cheese in place of the cream cheese & sour cream, it's good but doesn't caramelize as well as the latter.

Steps:

  • COMBINE apples and blueberries in a heatproof bowl and microwave on HIGH for 1 - 2 minutes or until heated through. Divide evenly between 4 x 1 cup heatproof serving dishes.
  • COMBINE Philly, sour cream and caster sugar and spread over the dishes. Sprinkle with brown sugar and cinnamon.
  • PLACE dishes under a preheated grill for about 2 - 5 minutes or until sugar has caramelised. Serve immediately.

  • In a large bowl, beat the egg whites, sugar, sour cream, applesauce and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to sour cream mixture, beating just until combined., In a large bowl, combine the filling ingredients. Spoon half of the batter into a greased and floured 10-in. fluted tube pan. Top with half of the filling. Repeat layers. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; invert pan and remove cake to a wire rack to cool completely. Combine glaze ingredients; drizzle over cake.

This recipe was given to me by a friend many years ago. It's always a big hit when it is served! The recipe calls for whipping cream, but I usually use whole milk since I don't always have cream in the house. Awesome served for dessert or breakfast!

  • Melt butter in the cream/milk. Cool.
  • In a large bowl, mix sugar and eggs for 1-2 minutes at medium speed.
  • Add cooled butter mixture, flour, baking powder and salt. Mix until smooth (batter will be thick).
  • Spread into greased and floured 13x9 pan. Bake at 350 for 45-50 minutes until a knife inserted into the center comes out clean.
