MICHAEL'S BREAKFAST SAUSAGE SEASONING MIX
My husband makes some of the best breakfast sausage I've ever had, and he was gracious enough to share the seasoning recipe! He doesn't make it too sweet on purpose--because I usually drench the sausage patties with maple syrup anyway--so if you prefer a sweeter variation, you could always add more brown sugar to taste. This seasoning amount is enough for 1 pound of ground pork.

- Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.
HOMEMADE SAUSAGE SEASONING BLEND
A dry herb blend for giving any ground meat a "sausage" flavoring. Try this not only with ground pork, but also ground turkey, beef, or chicken. Adapted from a recipe that came with one of my pizza pans. Recipe can be doubled, tripled, etc as needed. Each batch is enough to season 1 pound of meat. Leave out the crushed red pepper flakes for milder sausage.

- In a medium bowl, combine pork, sage, brown sugar, ground fennel, 1 teaspoon salt, and 1 teaspoon black pepper. Gently mix until all ingredients are incorporated.
- Form 4 patties, about 3 ounces each and 1/2-inches thick.
- Preheat a cast iron skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat. Add patties, in batches if necessary, so as not to overcrowd the pan. Cook until golden on the edges and cooked through, about 3 minutes per side. Repeat with remaining patties, adding additional olive oil if necessary between batches. Place slice of cheese on top of each patty during last minute of cooking.

- Stir the spices together and mix into 2 pounds of ground pork. You can cook it right away but it tastes better if you refrigerate it for 3 to 24 hours to let the flavors blend together.
- Notes: I form the loaf into a roll, and freeze for a few hours just before cooking so I can slice it easily for cooking. You can also form in into patties and layer them with pieces of wax paper, then seal in a plastic bag for freezing. Then you can just take out individual servings. Try adding red pepper flakes for a spicier sausage, or maple syrup for a maple sausage.

- Place pork, fennel seeds, orange zest, salt, black pepper, Italian seasoning, red pepper flakes, and nutmeg into a bowl and stir very lightly with a fork to combine. Do not overmix. Cover and refrigerate overnight.
- Check seasonings before using: Shape about 2 teaspoons sausage into a small patty and fry until brown in a skillet over medium heat. Let cool 1 to 2 minutes and taste for seasoning.
- Cover a cutting board with plastic wrap. Divide sausage into 6 equal pieces, roll into a balls, and wrap each ball with plastic wrap. Press flat into patties and discard plastic.
- Place a heavy skillet, such as a cast iron skillet, over medium-high heat. Cook patties in hot skillet until meat is no longer pink in the center and the sausage is browned, about 3 minutes per side. Serve immediately.
