- In a bowl, combine dry ingredients; cut in shortening until crumbly. stir in milk just until moistened. turn onto a lightly floured surface; knead five to six times. Roll to 1/2-in. thickness; cut with a 2-3/4-in. biscuit cutter. Place on an ungreased baking sheet. Bake at 450° for 12-15 minutes or until light golden brown; cool slightly. In a skillet over medium heat, fry eggs in butter until completely set. Split the biscuits; place cheese, hot eggs and ham on bottoms. Replace tops. Serve immediately.

CHEDDAR BISCUIT BREAKFAST SANDWICHES

- For the biscuits: Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
- Stir together the flour, baking powder, garlic powder and salt in a large bowl. Add the butter and snap and rub it in until the butter is pea sized. Stir in the Cheddar and chives, then make a well in the center and add in 1 1/4 cups of the buttermilk. Stir until just combined.
- Using a large tablespoon or a 1/4 cup ice cream scoop, scoop 9 biscuits onto your prepared baking sheet. Place the biscuits in the fridge while you prepare the eggs.
- For the eggs: Place a nonstick skillet over medium heat and add the sausage meat. Cook, breaking it apart with a wooden spoon, until golden brown and cooked through, 8 to 10 minutes. Remove the sausage from the pan and set aside.
- Lightly grease a 9-inch square baking pan with cooking spray. Beat the eggs and milk together in a large bowl. Season with the salt and pepper. Add the Cheddar and dill and pour into the prepared pan. Scatter over the cooked sausage and tomatoes.
- Retrieve the biscuits from the fridge and brush with the remaining 2 tablespoons of buttermilk. Bake the biscuits and the eggs for 15 minutes, then remove the eggs from the oven and set aside to cool slightly. Rotate the biscuits and continue baking until golden brown, 5 to 10 minutes.
- Cut the eggs into 9 equal pieces. If serving right away, split the biscuits in half and sandwich in the eggs. If prepping ahead, transfer the eggs to a resealable container and place in the fridge. Cool the biscuits to room temperature and transfer to a resealable container or zip top bag and place in the fridge. Both can be stored for up to four days. To reheat, simply reheat in the microwave. Biscuits can also be split and lightly toasted in the toaster.

- For the biscuits: Preheat the oven to 450 degrees F.
- Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
- On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
- For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
- Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.

- Trim crusts off bread slices, and spread margarine on 1 side of each bread slice.
- Place 4 slices in a buttered 8-inch square baking pan.
- Top bread slices with chopped ham, and top with remaining bread slices., buttered side up.
- Sprinkle with shredded swiss cheese.
- In a bowl, combine eggs, milk, onion flakes, prepared mustard, and salt and mix well. Slowly pour over over bread slices.
- Cover and refrigerate overnight, or for 8 hours.
- Remove baking pan from refrigerator about 10 minutes before cooking.
- Bake uncovered at 325 degrees for 30 minutes or until center is set.
- To serve cut into 4 sandwiches.

MAKE AHEAD BREAKFAST SANDWICHES
I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

- Bake biscuits according to package directions.
- While biscuits are baking start browning sausage.
- In a mixing bowl combine eggs dry mustard and pepper.
- Add egg mixture to the browned sausage and cook until eggs are done.
- After biscuits have cooled cut them in half and spread with butter.
- Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
- Cut cheddar cheese slices into fourths.
- Put one fourth of cheese slice on bottom half of biscuit.
- Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
- Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
- Place top of biscuit onto sandwich.
- Wrap each sandwich in wax paper and put them in large freezer bags.
- Place them in the freezer.
- To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

- Heat the oil in a frying pan. Add the onion and stir until translucent. Add the chorizo.
- NOTE: You don't need to use more salt since chorizo has enough salt.
- Cook for about 5 minutes, stirring occasionally. Add the bell peppers and stir.
- Beat the eggs until the yolks break and add them to the chorizo mix.
- Stir until the eggs are just cooked.
- Preheat oven to 375˚F (190˚C).
- Flour a surface and open a tube of biscuits. Place them close to each other. Roll them out with a rolling pin to create one single dough.
- Sprinkle cheddar cheese over the rolled biscuit dough. Add the chorizo and eggs. Roll it up and pinch the edge to seal it to the roll.
- Brush the roll with egg wash.
- Using scissors, make slits in the dough about 2 inches (5 cm) apart from each other. Then twist them to alternating sides to create a braided look.
- Bake for 25 minutes, or until golden brown.

- Preheat the oven to 400° and position racks in the upper and lower thirds. Line 2 baking sheets with parchment paper. In a large bowl, whisk the flour with the salt, baking powder and baking soda. Using a pastry blender or 2 knives, cut in the butter until it is the size of small peas. Add the buttermilk and stir until a shaggy dough forms.
- Turn the dough out onto a floured surface; knead until it comes together. Pat the dough 3/4 inch thick. Using a 3 1/2-inch round cutter, stamp out as many biscuits as possible. Reroll the scraps and stamp out more biscuits.
- Transfer the biscuits to the baking sheets and bake for about 30 minutes, until golden and risen, shifting the pans halfway through baking. Let the biscuits cool.
- Split the biscuits and spread with butter. Preheat a griddle and cook the biscuits, cut side down, until golden. Fill the biscuits with ham, cheddar and fried eggs. Spread with raspberry jam, if desired. Close and serve.
