WARM GRAPEFRUIT WITH GINGER-SUGAR

- Preheat broiler. Cut grapefruit crosswise in half. With a small knife, cut around the membrane in the center of each half and discard. Cut around each section to loosen fruit. Place on a baking sheet, cut side up. , Mix ginger and sugar; sprinkle over fruit. Broil 4 in. from heat until sugar is melted, about 4 minutes.

BROILED GRAPEFRUIT WITH VANILLA-GINGER SAUCE

Steps:
- Set oven to BROIL. Cut the grapefruit in half or in thick slices.
- Stir together the sugar and crystallized ginger. If you prefer, the sugar and crystallized ginger can be ground in a coffee mill/spice grinder.
- Spoon the sugar mixture onto the grapefruit slices. Add a few drops of vanilla extract to each slice. Or, if using vanilla paste, spread a little bit on each grapefruit slice first then add the sugar mixture.
- BROIL the grapefruit for about 3-5 minutes until the sugar starts to bubble. Watch carefully to avoid burning!
- Set aside to cool; serve at room temperature.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place grapefruit halves, cut sides up, onto a baking sheet; sprinkle each with about 1 1/2 tablespoon of brown sugar.
- Broil the grapefruit until the brown sugar has melted and begun to bubble, 3 to 8 minutes. Let cool for a few minutes before eating warm.

BROILED GRAPEFRUIT WITH BROWN SUGAR AND FLAKY SALT
A classic at a fancy breakfast or brunch, the best broiled grapefruits have a glossy caramelized topping covering sections of the warm, juicy citrus. This recipe also includes a little cinnamon for a heady fragrance, and a touch of sea salt, which softens the bitterness of the grapefruit peel. It's best served warm from the oven, when the brown sugar is still melted and syrupy. Ruby or pink grapefruits make for the prettiest presentation, but white ones work just as well, and have a livelier, more acidic flavor.

- Move the rack 4 inches away from the broiler, and turn it on.
- Halve the grapefruits through their equators. Using a paring knife or a grapefruit knife, cut the sections away from the membranes and pith so they are easy to spoon up. Place grapefruit halves, cut-side up, on a baking sheet. Sprinkle each grapefruit half with 1 tablespoon brown sugar, then drizzle with melted butter and a little honey. Sprinkle cinnamon over the tops if you like.
- Broil grapefruit until the sugar melts and caramelizes, 2 to 5 minutes. (Broilers vary a lot so watch carefully to make sure they don't burn.) Sprinkle with flaky sea salt, and serve immediately.

- Cut grapefruit in half and carefully slice each segment out and around the outside with a serrated knife for easy scooping once the grapefruit is done broiling. Place on baking sheet and sprinkle with ground ginger and brown sugar. If the grapefruit doesn't sit evenly a toothpick placed underneath can help even it out.
- Place under the broiler for 3-7 minutes until the sugar is bubbly and maybe even starting to brown. How long the grapefruit needs to broil depends on how close to the broiler and how hot it is, so watch carefully. If desired, add a tiny pinch of salt to the top and enjoy while still warm.
