"For a change from sandwiches, we like burritos-something many people don't consider in a brown-bag lunch," says Rhonda Cliett of Barton, Texas. "They're good cold or easy to heat if a microwave's available."

Brown-Bag Burritos image

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the next eight ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. , In a microwave, heat tortillas in batches until warm, about 45 seconds. Spoon 3 to 4 tablespoons of beef mixture off center on each tortilla. Sprinkle each with 2 to 3 tablespoons cheese and roll up. , Wrap burrito in paper towel, then in foil. Repeat with remaining tortillas and filling. Refrigerate. Eat burritos cold, or remove foil and heat paper towel-wrapped burrito in a microwave on high for 30-60 seconds.

1-1/2 to 2-1/2 cups shredded cheddar cheese

These are great to have in the freezer when you don't have time to make a real breakfast in the morning. Try substituting other breakfast meats (ham, bacon, turkey sausage) to suit your personal preference.

Breakfast Burritos image

Steps:

  • Scramble eggs, cooking to a dry consistancy. Cool and put in a mixing bowl.
  • Brown sausage, drain fat and cool. Add to the eggs.
  • Saute vegetables until they have released their liquid and it has evaporated. Cool, add to egg mixture.
  • Add the salsa and cheese, mix to combine.
  • Heat tortillas briefly to soften. Scoop 1/3-1/2 cup of filling into each tortilla and roll up.
  • Place each burrito in a zip-top sandwich bag and seal, squeezing out all air. Place burritos in a freezer safe container and freeze.
  • To reheat, remove frozen burrito from the sandwich bag, place on a microwave safe plate, and cook on full power until heated through, 1 - 1 1/2 minutes.

Steps:

  • Rehydrate and prepare 6 servings of Idahoan Hash Browns according to package, ensuring that they are golden brown.
  • Prepare scrambled eggs and add diced poblano chilies.
  • Warm tortillas and top with 1/2 cup hash browns and 1/2 cup scrambled egg mixture.
  • Sprinkle with scallions and 3 dollops of soft goat cheese on top of eggs.
  • Fold the sides of the tortilla in towards the center and roll up from the bottom, making sure to tuck in the sides as you roll.
