Steps:
- Cook brown rice until tender, allow to cool.
- To prepare the dressing put the ingredients into a large jar with a tight fitting lid and shake well. Put aside.
- In a large bowl add the rice and all other salad ingredients.
- Pour over the dressing and mix through. The flavours improve on standing as the rice soaks in the dressing. Enjoy!

- In a large pan, heat oil over medium heat.
- Add onion, celery, carrot, garlic and zucchini.
- Cook until onion just starts to brown.
- Add brown rice and cook stirring often for about 1 or 2 minutes.
- Add all other ingredients, heat to boiling, stir, cover and reduce heat to low.
- Allow to simmer for 45-50 minutes; NO PEEKING OR STIRRING!
- Remove from heat and allow to stand for 10 minutes without lifting the lid.
- Fluff with a fork and serve with chicken, turkey or whatever you prefer.

- Saute celery, onion, bell pepper and carrot in oil over medium heat until onions are translucent and veggies are tender.
- Add white wine, sage, herbs de provence and parsley and cook until wine is absorbed, stirring frequently.
- Add brown rice and continue cooking until heated through, stirring frequently.
- Serve immediately or use as a stuffing.

BROWN RICE SALAD
Steps:
- In a 10-inch saute pan over medium heat, fry the bacon until crisp. Drain, crumble, and set aside. Reserve 1 tablespoon of the bacon fat.
- Add the red onion to the pan and cook until translucent, approximately 5 to 6 minutes. Add the vinegar, chicken broth, mustard, sugar, salt, and pepper to the pan and stir to combine. Add the bacon back to the pan along with the rice and cook, stirring occasionally, until the liquid is absorbed, approximately 7 to 10 minutes. Stir in the dill. Allow to cool slightly before serving.
- Preheat the oven to 375 degrees F.
- Place the rice into an 8-inch square glass baking dish.
- Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
- After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.
GODDESS BROWN RICE BOWL

- For the green goddess dressing: Combine the anchovies, garlic, yogurt, mayonnaise, parsley, basil, chives, tarragon and lemon juice in a blender and blend until smooth and green. Season with salt and pepper to taste. Refrigerate until ready to serve.
- For the rice bowl: Bring a large saucepan of water to a boil. Add 1 teaspoon salt and the brown rice and cook until the rice is tender but still toothsome, about 45 minutes. Drain well.
- Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Add the fennel, shiitakes and 1/4 teaspoon salt and cook, stirring occasionally, until the mushrooms are golden brown in spots and the fennel is crisp-tender, about 5 minutes. Add the remaining tablespoon oil to the skillet, followed by the sugar snap peas, zucchini and another 1/4 teaspoon salt. Cook until crisp-tender, stirring occasionally, about 5 minutes.
- Divide the rice among 4 bowls. Top with the vegetable mixture and then with the avocado slices. Drizzle with green goddess dressing and sprinkle with the pepitas.
BROWN RICE HARVEST DRESSING / STUFFING
This is a good dressing recipe that we like with pork chops or duck. (It can also be used as a stuffing.) I based it on a few different recipes for brown rice dressing, but think it has an extra richness with the butter and the egg. The seasonings, of course, should be adjusted to your taste!

- Preheat the oven to 350°F.
- Melt the butter in a medium pan and cook the onion and apple over medium heat until the onion is translucent and soft.
- Mix the rice, raisins, pecans, and seasonings together in a large bowl.
- Pour the butter, onion, and apple over the rice mixture and fold together.
- Beat the egg and apple cider (or chicken broth) and pour over the dressing mixture. Fold until well combined, adding additional apple cider or chicken broth if the mixture is too dry.
- Put dressing into a greased 2 1/2 quart casserole dish and bake for 1 hour.

- In a large saucepan, simmer the wild rice in 4 1/2 cups broth, salt to taste, until the grains start to break open; drain off any liquid, return to the pot and stretch a clean kitchen towel beneath the lid and let sit 10 to 15 minutes.
- Meanwhile, in a smaller saucepan, simmer the brown rice, with 1 1/2 cups broth, salt, until tender and all the liquid has been absorbed, 35 to 40 minutes; turn off heat and stretch a clean kitchen towel under the lid and let sit 10 to 15 minutes.
- In a large skillet, heat oil, over medium heat, and cook the onion, stirring often, until it begins to soften, about 3 minutes.
- Add celery and a generous pinch of salt, and continue cooking another 3 or 4 minutes; stir in garlic, if using, and cook 30 seconds.
- Remove from heat and transfer to a large bowl; add rices and toss well.
- Increase the heat in the skillet to medium high and add the butter; when the foaming subsides, add apple, stirring until they begin to caramelize, about 5 minutes.
- Remove from heat and add to the rice mixture; add remaining ingredients, toss and season to taste with salt and pepper.
- Preheat oven to 325 degrees F; grease a large baking dish with butter or oil.
- Transfer rice mixture to baking dish, cover with aluminum foil, and warm in oven for 20 to 30 minutes.
- NOTE: The rices can be cooked up to 3 days in advance. The entire dish is better the second day, so you can make it a day ahead and heat the day you are serving it.

- Combine water, brown rice, and salt in a pressure cooker. Close and secure the lid; bring to high pressure according to manufacturer's instructions. Cook for 10 minutes.
