BROWN RICE PILAF

I love this pilaf! I never liked brown rice until I tried it this way. It goes with just about anything, and the leftovers (when there are any) reheat well, too.

Brown Rice Pilaf image

Steps:

  • In a small skillet, heat oil over medium-high heat. Add onion and garlic; cook, stirring, until onion is golden, about 5 minutes.
  • Add rice and sauté for 1 minute.
  • Add broth, and season with salt and pepper to taste; bring to a boil. Cover and reduce heat to low.
  • Simmer until rice is tender and most of the liquid is absorbed, about 45-50 minutes. Check rice occasionally and add water if necessary.
  • Uncover and let rice stand for 5 minutes before serving.

1 tablespoon olive oil
1 small yellow onion, chopped
3 garlic cloves, minced
1 cup long grain brown rice (not instant)
2 1/2 cups fat-free low-sodium chicken broth or 2 1/2 cups vegetable broth
salt & pepper, to taste

Steps:

  • Cook 1 slice chopped bacon in butter in a saucepan. Add 1/2 small chopped onion and cook until soft. Add 1 1/2 cups basmati rice and cook, stirring, 2 minutes. Add 1 cup chicken broth, 1 1/4 cups water, and salt and pepper to taste. Bring to a simmer and cook, covered, 15 minutes. Add 1/3 cup chopped toasted pecans; cover and let stand 10 minutes. Fluff with a fork.

Rice With Onions, Garlic and Herbs image

Steps:

  • Combine the first 4 ingredients in a food processor and puree.
  • Put the oil in a large saucepan over medium heat and add the rice, stirring for a few minutes.
  • Stir in all but 1 tablespoon of the onion mixture, add the salt and pepper, and cook for a couple minutes stirring.
  • Add the stock and bring to a boil.
  • Cover and turn heat to medium/low cooking until liquid is absorbed, about 15-20 minutes.
  • Stir in the reserved tablespoon of the onion mixture and serve.

1 large onion, peeled and cut into chunks
10 garlic cloves, peeled
1/2 cup fresh parsley leaves
1/2 cup fresh basil leaf

Steps:

  • Heat butter in 1 1/2-quart saucepan over medium heat.
  • Cook onion in butter 2 to 3 minutes or until tender. Add broth; heat to boiling. Stir in rice. Heat to boiling; reduce heat.

Steps:

  • Heat butter and oil in a large sturdy saucepan. When hot add the onions and saute over medium-to-high heat for about 2 to 3 minutes. Add the herbes de Provence and rice and mix well to combine. Add water, salt and pepper and bring mixture to a boil, stirring so it does not stick.
  • When boiling, reduce the heat and cook, covered, over very low heat for about 40 minutes, until rice is tender, a little chewy and most of the moisture has been absorbed. Check rice near end of cooking time; it may take a little longer than 40 minutes to absorb all the water and cook through. Serve with sweet and sour curried chicken.

Quick Brown Rice with Onions and Mushrooms image

Steps:

  • Drain the liquid from the can of mushrooms into a measuring cup and add enough additional water to make one cup.
  • Bring the liquid to a boil in a covered sauce pan, add the instant brown rice, cover, reduce the heat and simmer for 5 minutes.
  • At the end of the 5 minute cooking period, remove from the heat, but DO NOT PEEK.
  • Set aside for at least 5 more minutes to rest.
  • While the rice is resting, saute the onions and mushrooms in the olive oil and butter.
  • When the onions are transparent, remove from the heat, add the finished rice to the saute pan, add salt and pepper and stir.

Steps:

  • Bring the broth or water to a boil in a medium saucepan, then add the rice, loosely cover, and reduce heat.
