BROWN RICE WITH SESAME SEEDS

I have been making this for years as a variation on the way my folks taught me how to make white rice.

Brown Rice with Sesame Seeds image

Steps:

  • Saute rice in butter just until translucent and very lightly browned.
  • Add onion and sesame seeds, and continue browning until onion is translucent, stirring frequently to prevent onion from burning.
  • Drain any excess butter or olive oil.
  • Add stock or water carefully to prevent steam burns; it WILL blow steam!
  • Adjust heat for a slow simmer, cover, and cook about 45-50 minutes, stirring gently every 15 minutes.
  • If all liquid is not absorbed, remove cover and continue cooking for up to another 15 minutes.
  • Fluff with a fork before serving.

1 cup uncooked brown rice
2 tablespoons butter or 2 tablespoons olive oil (or a combination)
1/4 cup toasted sesame seeds
1 small onion, chopped
2 cups chicken broth (preferred) or 2 cups very hot tap water
1 teaspoon salt (decrease or delete if chicken broth is salted, required with water)

Steps:

  • Rinse the rice in a fine-mesh sieve under cold water for 30 seconds. Drain.
  • Combine the rice, salt and 2 cups water in a wide, medium saucepan and bring the water to a boil. Reduce the heat to low, cover and simmer until all liquid is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.

  • In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish. Fried Brown Rice with Shrimp and Vegetables image

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
  • Add the shrimp to the skillet, sprinkle with 1/4 teaspoon salt and cook, stirring constantly, until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining tablespoon oil, then add the watercress, carrots, peas, garlic, soy sauce, and 1/4 teaspoon salt and cook, stirring constantly, until the watercress wilts and the peas heat through, 2 to 3 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp, and any juices to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the scallions and sesame oil and serve.

Stir Fried Sesame Vegetables with Rice image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a saucepan combine broth, rice and margarine. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes, or until all liquid is absorbed.
  • Place sesame seeds on a small baking sheet and bake in preheated oven for 5 to 6 minutes, or until golden brown; set aside. Meanwhile, heat peanut oil in a large skillet or wok over medium-high heat until very hot. Add asparagus, bell pepper, onion, mushrooms, ginger and garlic and stir-fry for 4 to 5 minutes, or until vegetables are tender but crisp. Stir in soy-sauce and cook for 30 seconds. PERFECT BROWN RICE IN A STEAMER

We've started eating whole grains and that means we now eat brown rice instead of the starchy white rice. But it takes so long to cook it, so I was trying to find the correct formula for making it in my rice steamer. So I could cook it on the weekends and have it ready to go for the week. This "recipe" makes about 6 cups, which for my family is two dinners worth plus some. I've also included freezing instructions for the extra servings.

Perfect Brown Rice in a Steamer image

Steps:

  • Place 2 c rice in a dish with a cover. Pour enough water in to cover and let sit on the counter for at least 2 hours.
  • Drain in a colendar.
  • Fill steamer with water to the high mark. Place steamer basket on steamer. Put rice in rice bowl with 2 1/2 c clean water.
  • Cover steamer and steam for 65 to 70 minutes Let sit for 10 minutes.
  • Remove rice from steamer. If eating it right away serve as usual with butter and spices.
  • If you are not eating right away put rice back in colendar and rinse with cold water till rice is cooled. Place portions into zip top freezer bags, lay flat and squeeze out air and seal bags. Place in freezer till serving day.
  • To use frozen rice, place bag in fridge to thaw about 12 hrs before you are going to use it. Pour thawed rice into a microwave container with just a sprinkle of water. Cover and vent. Microwave about 2 to 3 mins or till warmed through. Serve as usual.

  • Heat the oven to 220C/200C fan/gas 7. Tip the broccoli onto a baking sheet along with the red onion and 1 tbsp of the sesame oil. Roast for 20 mins or until the broccoli is tender. Leave to cool a little.

Burmese Brown Rice With Sesame Fried Vegetables image

Steps:

  • Wash rice thoroughly, then boil in 5 cups of water with the sea salt. Simmer until the rice is tender (about 45 minutes with brown rice.).
  • Slice onion finely. Cut radish in 4 pieces. Cut carrot on the diagonal in slices, then cut the slices in strips. Quarter the cucumber lengthwise, then slice. You don't have to peel it.
  • Heat oil in a saute pan and stir fry the garlic until it turns brown. Some fresh minced ginger may also be added. Add all the vegetables and stir fry for about 3 minutes. Add sesame seeds and stir fry for two more minutes. Turn off the heat and set aside.
  • Add veggies to the rice. Add soy sauce and lemon juice. Serve with tahini poured over all.
