MEATLOAF WITH BROWN SUGAR KETCHUP GLAZE

- Glaze: Mix all ingredients and set aside.
- Meat loaf:.
- Heat oven to 350°F.
- Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce and milk.
- Add egg mixture to meat in large bowl, along with crackers, parsley and cooked onion and garlic.
- Mix until mixture does not stick to the bowl, if mixture sticks to bowl add milk by tablespoons until it does not stick.
- Shape into loaf.
- Place on foil lined pan, for easy clean-up.
- Brush with half the glaze.
- Arrange bacon slices crosswise over the top of loaf overlapping, tucking in bacon ends under loaf.
- Bake until bacon is crisp and internal temperature registers 160°F, about 1 hour.
- Cool at least 20 minutes.
- Simmer remaining glaze over medium heat until slightly thickened.
- Slice meatloaf and serve with extra glaze.

- Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
- Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.
- Press mixture into a loaf and put in baking dish.
- In a small bowl, stir together 1 tbsp mustard, 1/4 cup ketchup and 2 tbsp brown sugar. Pour on top of the meat loaf within the last 20-30 minutes of cooking.
- Bake for about an hour until it's cooked through.

VEGETABLE MEATLOAF WITH BALSAMIC GLAZE
Steps:
- Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell peppers, garlic paste and 1/4 teaspoon red pepper flakes. Season with salt and pepper and cook until the vegetables are almost soft, about 5 minutes. Set aside to cool.
- Whisk the egg and fresh herbs in a large bowl. Add the turkey, panko, grated cheese, 1/2 cup ketchup, 2 tablespoons balsamic vinegar and the cooled vegetables; mix until just combined.
- Gently press the mixture into a 9-by-5-inch loaf pan. Whisk the remaining 1/4 cup ketchup, 1/4 cup balsamic vinegar and 1/4 teaspoon red pepper flakes in a small bowl; brush the mixture over the entire loaf. Bake for 1 to 1 1/4 hours. Let rest for 10 minutes before slicing.
MEAT LOAF WITH BROWN SUGAR-KETCHUP GLAZE
If you like, you can omit the bacon topping from the loaf. In this case, brush on half of the glaze before baking and the other half during the last 15 minutes of baking. If you choose not to special-order the mix of meat below, we recommend the standard meat loaf mix of equal parts beef, pork and veal, available at most grocery stores.

- Soak breadcrumbs in milk until milk is absorbed.
- Beat eggs slightly, add in with breadcrumb mixture. Add ground meat, diced onion, salt, pepper and sage. Combine well.

Most people who replace their ground beef with buffalo, in recipes like meatballs, burgers, and meatloaf, are usually disappointed. Ground buffalo is much leaner than ground beef, which is the biggest challenge. In case you're new, it's the fat that provides most of the flavor and moisture. Also, for whatever reason, pre-packaged buffalo is ground very fine, almost to a paste, which can lead to a rubbery meatloaf, unless you use a few tricks.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. - Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
