BEET AND BUTTER LETTUCE SALAD WITH HORSERADISH DRESSING

Beet and Butter Lettuce Salad with Horseradish Dressing image

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off the tops of the beets, then wrap each in foil and roast until tender when pierced with a paring knife, 45 minutes to 1 hour. Cool the beets slightly, then peel them under cold running water. Cut the beets into 1/2-inch-thick wedges.
  • Whisk the sour cream, horseradish, vinegar and scallions together in a small bowl with 1/2 teaspoon salt and a generous amount of pepper.
  • Put the lettuce in a salad bowl and top with the beets. Drizzle the dressing on top. Toss right before serving.

4 medium beets, preferably 2 red and 2 golden
1/2 cup sour cream
2 tablespoons prepared horseradish
1 1/2 tablespoons red wine vinegar
1 tablespoon finely chopped scallions
Kosher salt and freshly ground black pepper
2 heads butter lettuce, torn into pieces

Braised Beets image

Steps:

  • Peel about a pound of beets and chop them into 1-inch cubes.
  • In a large saucepan, combine a couple of tablespoons of butter with the vegetables and stock to cover (.5 cup or more).
  • Add a splash of white wine and some freshly chopped tarragon; bring to a boil.
  • Cover and adjust the heat so the mixture simmers.
  • Cook until the vegetables are tender, 15 to 20 minutes.
  • Add salt and pepper to taste, and serve.

Horseradish Butter image

Steps:

  • Pulse 1 stick softened butter in a food processor with 1/3 cup chopped chives, 3 tablespoons horseradish, 1 teaspoon salt and 1/2 teaspoon lemon zest until smooth. Scrape the butter onto plastic wrap or parchment, wrap and shape into a log. Chill until firm. Slice and serve over grilled steak.
  • TIP: Try making other flavored butters with odds and ends from your fridge: capers, pickles, olives or even hot sauce.

BRAISED LOBSTER

Steps:

  • Cook lobster (either steam, boil or broil) for 12 minutes- shock in an ice bath to stop cooking. Remove meat from tail. Cut tail in half. Crack claws and remove meat.
  • For chanterelles, clean well, cut down to size. Saute with shallots. Season with salt and pepper. Drain well and reserve liquid. Cool.
  • For Fingerlings cook with thyme, bay leaves, onion and garlic.
  • Cook Macaroni for 10 to 11 minutes. Blanch and shock, toss in olive oil.
  • Once reduced and strained place Broth in saute pan and bring to a simmer. Add lobster meat, chanterelles, fingerlings, and pasta. Reduce sauce. Mount with butter, and garnish with oregano.
  • Put all ingredients in a large pot at medium heat. Reduce by 60 percent. Strain.

Two 1 1/4-pound lobsters
3 ounces chanterelles

1 bunch thyme
Sliced bay leaves
1 cup onions
3 cloves garlic- peeled and cut in half
3 ounces macaroni

1 quart shallots
2 bunches of thyme
3 quarts lobster shells
1 quart Chanterelle stems
2 bunch oregano stems
1 gallon white wine
1 quart lemon juice

LOBSTER BUTTER

This is a Yankee take on the classic French recipe for beurre de homard, which incorporates cooked lobster meat into a compound butter. It is thriftier, using the shells to bring flavor instead of the lobster meat, but is no less delicious for that. The process is akin to making a lobster stock, with butter in place of water. Use the lobster butter as a melted dip for shrimp or yet more lobster, or as a topping for sautéed scallops or fish.

Steps:

  • Heat oven to 300 degrees. Put lobster shells on the largest sheet pan you can fit in the oven, and allow them to dry and roast, about 15 to 20 minutes. Remove and set aside.
  • Meanwhile, melt 1 stick butter per lobster in a large bowl or double boiler set over simmering water, making sure bowl does not touch the surface of water. Add lobster shells to the melted butter and simmer gently, without boiling, for about 20 minutes.
  • Strain the melted butter through a cheesecloth-lined sieve into another bowl, then set that bowl into ice to chill. Cover bowl and refrigerate to set, then skim off the top and discard any liquids. Use within a few days, or freeze for up to a few weeks.

Steps:

  • Scrub beets; trim stems to 1/2 inch. Place beets in a medium saucepan; add water to cover by 1 inch. Bring to a boil over high heat. Reduce heat to medium high; cook at a gentle boil until beets are tender when pierced with a small, sharp knife, 30 to 40 minutes. Remove from heat, drain, and set beets aside until cool enough to handle.
  • Meanwhile, grate horseradish on small holes of a box grater. Place in a small bowl; stir in vinegar, salt, and sugar.

Lobster with lemon & herb butter sauce image

Steps:

  • To make the sauce, warm the lemon juice in a small saucepan. Add the butter, a few cubes at a time, swirling them into the lemon juice over a very low heat to melt them, adding a few more pieces until all the butter is used. Take the sauce off the heat, season to taste and keep warm.
  • To make the salad, gently toss the rocket, avocado and lobster meat together. Dress with the lemon juice and olive oil, and toss again until everything is mixed and coated.
  • To serve, stir the herbs through the sauce and pour into a ramekin or small bowl. Put the sauce on a plate and pile the large chunks of lobster meat on one side and the salad on the other. Bring the plate to the table to share - dip the tail meat, claws and crusty bread into the sauce.

  • Poaching the lobsters can be done ahead of time. Combine water, vinegar and salt and bring to a boil. Cook each lobster separately. Plunge the lobster into the boiling water and cook for two min. Don't overcook since the meat should be rare. When the lobster is done, immerse in an ice bath and allow to rest. Remove the meat from the tail and claws and chill till ready to use.
  • For Sauce:Heat the beet juice over medium heat in a small saucepan and reduce it by half. Add in the balsamic vinegar, lemon juice and horseradish; set aside.
  • Beurre Monte:Cut one lb. of butter into small cubes and let it come to room temperature. Heat one Tbsp. of water in a small saucepan over low to medium heat; whisk in the butter cubes, one by one, till the sauce is completely emulsified. When this is done, put aside and keep it in a hot place. Overheating will cause it to separate. This will be the base for the poaching liquid for the lobster.
  • For Poaching:Place the beurre monte over medium heat. Make sure it does not boil, as it will separate. Put the rare lobster meat into the butter and leave for 5 to 6 min. Reheat the beet sauce. Bring the beet sauce to a simmer and season.
