SUNNY'S SIMPLE ROASTED TOMATO SOUP WITH BROILED CHEESE TOAST

Steps:
- For the soup: Preheat the oven to 400 degrees F. Line a large baking sheet with nonstick aluminum foil.
- Drizzle some olive oil in a zig-zag motion on the foil. Add the thyme and garlic and season the baking sheet with salt and pepper. Place the tomatoes, bell peppers and jalapeno on the baking sheet sliced-side down, covering the garlic cloves and thyme as you go along. Pour over the onions, drizzle the top of everything with olive oil and season again with a pinch of salt and a few grinds of pepper. Roast until the onions are golden and slightly charred, about 40 minutes.
- Transfer everything from the baking sheet to a blender in batches and pulse until smooth. Pour into a pot and bring to a simmer over medium-high heat, stirring the entire time. Add enough vegetable stock to achieve the desired consistency; you may not use it all. Keep warm on low.
- For the toast: Preheat the broiler on high.
- Put a cooling rack on top of a baking sheet and arrange the bread on the rack. Top each piece of bread with a slice of cheese and place under the broiler. WATCH while they cook: the cheese will melt and bubble, then the corners will begin to blacken--pull them out then! This takes less than a minute. Serve aside or atop a bowl of soup.
MY MOM'S TOMATO AND BEAN 15 MINUTE STOUP

- Add extra-virgin olive oil to the pot, 2 turns of the pan. Add garlic and crushed red pepper flakes, stir then stir in the onions, carrots, celery and zucchini. - Reduce the heat and stir in the tomato puree and pesto.
- Cook gently for 5 minutes.

ROASTED RED PEPPER AND SUN-DRIED TOMATO SOUP

- Rehydrate the dried tomatoes by soaking them in warm water for 1 hour. Meanwhile, sweat the onion in the olive oil in a 2-quart saucepan over medium heat, uncovered, for 7 to 10 minutes, stirring occasionally. Do not let the onion color.
- Add the stock, rehydrated tomatoes, roasted peppers, fresh tomatoes, salt and pepper and let it all simmer together for 10 minutes. Pour the soup into a blender and process at a high speed for 4 minutes, until very smooth. Then pass it through a strainer to remove the vegetable skins. Adjust the seasoning and serve with fresh basil leaves as a garnish.
SUNDRIED TOMATO PESTO

- Cut the tomatoes in half and lay face up on a sheetpan prepared with olive oil. Sprinkle the tomatoes with olive oil, salt and pepper. Let dry in a 200 degree oven for 4 to 5 hours. Tomatoes will not dry out completely. Put the tomatoes, garlic, olive oil, oregano, basil, and salt in a blender or food processor.

OLD-FASHIONED VEGETABLE BEEF SOUP

- Cut meat into small, bite-size (1/2") pieces.
- In a large pot or dutch oven, saute meat in 1 T oil on medium-high heat until all sides are brown.
- Set aside on a plate.
- Chop celery, onion, potatoes, and carrots into bite-size pieces.

- In a large pot, heat oil over medium heat. Cook onion, stirring occasionally, until golden, 3 to 5 minutes. Add celery, carrots and garlic; cook, stirring, until vegetables soften, 3 to 5 minutes. Add wine; stir to scrape brown bits off bottom of pot. Add stock, beans, tomatoes, bay leaves and 1/4 teaspoon salt. Bring soup to a boil; reduce heat, cover, and simmer, stirring occasionally, until carrots are very soft, 15 to 20 minutes. In a blender, puree basil, walnuts, black pepper, remaining 1/4 teaspoon salt and 1/4 cup water. Transfer pesto to a bowl; wash blender. Remove bay leaves from soup; discard. In blender, carefully puree half of soup; transfer to a bowl; repeat with remaining half of soup. Divide soup among 4 bowls, dollop each with 1/4 pesto, and swirl in; serve.
VEGETARIAN TOMATO CREAM SOUP WITH SUNDRIED TOMATOES.
This is based on Mark Bittman's Elegant Wintertime Tomato Soup, with more tomatoes and less stock, making it thicker and creamier. It makes enough for a family of three to eat all week and stores very well in the refrigerator. This soup has pretty much changed my life, it is so good. I've served it on it's own with bread and butter or with grilled cheese. I've also put a fried egg into it as well and it was great that way too.

- Preheat the oven to 375 degrees.
- Put the sundried tomatoes in a heatproof bowl and cover with 4 cups of boiling water.
- Drain the canned tomatoes and preserve the liquid. Cut them in 1/2 and put in a shallow roasting pan. My oven is only big enough for an 8x8 pan and it works for this as well. Try to drain the tomato juice from the roasting pan after you've finished putting them in there, and keep the liquid. Draining will help them roast better.
- Drizzle with two tablespoons of olive oil and sprinkle with thyme.
- Roast in the oven for about 30 minutes. If you used a more shallow pan, the tomatoes will be drier and browned. In the 8x8 it just gives them a nice flavor. You can roast them for longer if you want them to be drier.
- Once the tomatoes are done roasting, pour the soaking liquid from the sundried tomatoes into the roasting pan. It sounds gross, but it's totally good. Trust me. Roughly chop the sundried tomatoes too and add those to the roasting pan also. Break up the roasted tomatoes and scrape up the browned bits at the bottomg at the same time while mixing all of this together.
- Heat the remaining olive oil in a soup pot over medium to medium-high heat (whatever is appropriate for your cookwear). When hot, add the garlic and cook until it begins to change color - about 1 minute. Add the carrot and onion and cook until they start to sweat - about 3 minutes. Sprinkle with salt and pepper, then add the honey and stir until it melts.
- Add the reserved liquid from the canned tomatoes and stir for a few minutes - until the liquid begins to darken. Add the stock and the contents of the roasting pan (at this point, it's the whole peeled tomatoes, the sundried tomatoes, and the soaking liquid for the sundried tomatoes). Chop the basil and add it to the soup.
- Turn the heat up and bring the soup to a boil and the lower so it boils gently. Cover and cook for 30 minutes. (It can cook for longer too, but only needs about 30 minutes. I think it tastes a bit better when it cooks for about an hour).
- Turn off the heat and let it the soup stop boiling and cool a bit. Use an immersion blender to puree the soup. (Or you can let the soup cool to room temperature and puree it in a blender and return to the pan and reheat). Stir in heavy cream and serve or make ahead and reheat when you're ready. This stores will in the refrigerator - I haven't tried in the freezer.
SUNDRIED TOMATO TAPENADE
A to-die-for take on the usual olive tapenade. Don't use California sundried tomatoes because they are too sweet! Every time I make this I get requests for the recipe! I've never actually had the patience to chill this and always end up serving it right away. It's a huge hit! Serve with your favorite crackers.
