A very light and fluffy pancake that requires fresh buttermilk, but it's the best I've ever made!

Steps:
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
- Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
- Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

- Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk the eggs, buttermilk, vanilla and melted butter in a medium bowl until incorporated. Whisk the egg mixture into the flour mixture until just combined (it's OK if there are a few lumps).
- Heat a griddle or large nonstick skillet over medium heat; lightly brush with butter. Pour 1/2 cup batter onto the griddle for each pancake and cook until bubbles form on top and the bottom is lightly browned, about 3 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, about 1 more minute. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as necessary. Serve with butter and syrup.

- Arrange a rack in the middle of the oven and heat to 375 degrees F.
- Coat a 10-inch aluminum tube pan or 2 (9 by 5-inch) loaf pans with 1 tablespoon of butter and dust with 2 tablespoons of the flour.
- Combine the remaining 12 ounces of butter and sugar in the bowl of a stand mixer and cream for 6 minutes on medium speed, using the paddle attachment. Stop once to scrape down the sides of the bowl with a spatula. With the mixer running at lowest speed, add the eggs, 1 at a time, making sure each egg is fully incorporated before adding the next. Again stopping once to scrape down the sides of the bowl. This will take approximately 1 1/2 minutes. Add the vanilla and salt and beat on medium speed for 30 seconds.
- With the mixer on the lowest speed add the flour in 3 installments, alternating with the buttermilk, beginning and ending with the flour, making sure each portion is fully incorporated before adding the next. After the final addition, beat the batter for 30 seconds on medium speed until almost smooth.
- Scoop the batter into the prepared pan(s), dividing evenly if using 2 pans. Bake for 1 hour in a tube pan or in loaf pans, until the internal temperature reaches 210 degrees F on an instant-read thermometer. The crust will be golden brown and spring back when pressed, but the crack around the center will appear moist.
- Remove the cake from the oven to a cooling rack for 10 minutes. Remove the cake from the pan(s) and cool on the rack for 10 minutes longer. Store the cake on the rack covered with a tea towel for up to 3 days.

- Sift dry ingredients into medium bowl.
- Mix egg, oil, and buttermilk together and add to dry ingredients.
- Stir only until dry ingredients have disappeared.

- Blend the buttermilk, eggs, butter, and vanilla until well combined.
- Slowly add the flour, sugar, baking powder, baking soda, and salt.
- Continue to blend until the batter is thick and smooth.
- Optional: For thinner pancakes - add buttermilk to it out to the consistency you like. For thicker pancakes - add a little more flour to desired thicknessHeat a non-stick frying pan on medium heat and coat it with non-stick spray.

- Add roughly half of the dry mix into the wet and whisk smooth, not too long.
- Add the remainder of the dry mix and barely whisk together. From the Gourmet International Pancakes and Waffles Cookbook circa 1970. My mom gave me this book when I first moved out on my own. I just recently tried the buttermilk pancake recipe and I can say that we haven't used another pancake recipe since. Light, fluffy, and absolutely delicious. Before this my family preferred a box mix (yuck!) so I am so glad I found this very simple recipe. This feeds my VERY hungry family of 3 sufficiently so I would definitely double if you have a larger family.

- Place sifter into a medium sized bowl. Sift flour, sugar, baking powder, and salt.
- Combine the eggs, buttermilk, and melted butter in another bowl (I use a large liquid measure).
- Add wet ingredients into dry ingredients and whisk together until combined.
- For each pancake pour 1/3 cup batter (for a pretty large pancake) into a preheated skillet on medium heat that has been melted with butter or sprayed with non-stick spray. Once bubbles start to form and pop in the middle, flip the pancake and brown on the second side.
- Serve with your choice of topping. We like homemade syrup, or jam with sour cream and vanilla yogurt.
