Butternut Squash Soup with Star Anise and Ginger Shrimp image

Steps:

  • Toss shrimp with ginger in a bowl and marinate, chilled, 30 minutes (do not marinate any longer or enzymes from ginger will begin to cook shrimp).
  • Make soup while shrimp marinate:
  • Cook shallot, garlic, and anise in butter in a 3-quart heavy saucepan over moderate heat, stirring, until shallot is softened, about 5 minutes. Add squash, stock, and water and simmer, uncovered, until squash is very tender, about 20 minutes. Remove star anise.
  • Purée soup in 2 batches in a blender (use caution when blending hot liquids) until very smooth, about 1 minute per batch, then transfer to cleaned pan and keep warm, covered.
  • Sprinkle marinated shrimp with salt. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté shrimp in 2 batches, stirring, until just cooked through, about 3 minutes per batch, transferring to paper towels.
  • Bring soup to a simmer and season with salt and pepper. Divide among 8 shallow soup bowls and mound 3 shrimp in each bowl.

Butternut Squash Soup image

Steps:

  • Preheat oven to 450.
  • Cut squash in half lengthwise, scoop out seeds and place cut side down on a baking sheet.
  • Roast the squash for 40-45 minutes or until it is very tender.
  • Allow squash to cool.
  • While the squash is roasting,saute the onion and ginger in the butter over a medium heat until the onion is translucent and soft.
  • Add the broth, cover and simmer for 10 minutes.
  • Scoop the cooled squash from the skin.
  • Place half the squash and half the broth in a blender, puree until smooth.
  • Repeat with the other half of the squash and broth.
  • If needed, add water to achieve the desired consistency.
  • Return the soup to the sauce pan and reheat.
  • Salt and pepper to taste.
  • If desired, garnish each serving with a spoonful of sour cream.

Roasted Butternut Squash Cream Soup with Ginger image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Brush cut side of butternut squash with olive oil and place on a baking sheet, cut-side down.
  • Bake in the preheated oven until peel is crinkly and butternut squash is soft, about 40 minutes. Scrape flesh into a bowl with a spoon and set aside.
  • Melt butter in a large pot over medium heat and cook onions until soft and translucent, about 5 minutes. Add squash flesh, 2 cups hot broth, and ginger. Season with ginger, curry, cumin, sugar, salt, and pepper. Bring soup to a boil, reduce heat, and simmer until flavors are well combined, about 15 minutes.
  • Puree soup with an immersion blender until smooth. Add more hot broth for a thinner soup. Stir in cream and season to taste with sugar, apple cider vinegar, cayenne pepper, and salt.
