COFFEE CHIP COOKIES
"My daughter loves the subtle coffee flavor in these soft cookies," says Maurane Ramsey of Fort Wayne, Indiana. "Now that she's away at college, I send her goody boxes with these freshly baked treats inside. The recipe makes plenty for her to share with her friends."

Steps:
- In a large bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Combine water and coffee; set aside. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with coffee. Stir in the chocolate chips. Refrigerate for 1 hour. , Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden around the edges. Remove to wire racks to cool.

I got this recipe out of the Australian Country Style magazine. I have often made them as a present for friends and they have always been well received.

Steps:
- Preheat the oven to 180°C Grease and line a biscuit tray.
- Place the butter and sugar in a mixing bowl and, with an electric mixer, beat until light and creamy.
- Beat in the condensed milk.
- Add the flour and mix on low speed until smooth.
- Stir in the choc bits until well combined.
- Roll about 2 teaspoonfuls of the mixture into balls and place on the lined tray.
- Press each ball gently with a floured fork.
- Bake for 12-15 minutes or until lightly golden.
- Remove from the oven and allow to cool on the trays.
- Store in air-tight containers.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
- Sift together the flour, baking soda and salt; set aside.
- In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
- Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Almost everybody has heard the one about the woman lunching at the Neiman Marcus Cafe in Dallas, who enjoyed the chocolate chip cookies so much that she asked for the recipe. For "only two-fifty," the waitress said, it was hers. But when the credit card bill arrived, the woman found the total near $300. Turns out the recipe cost $250, the story goes. In 1997, after years of enduring the myth, Neiman Marcus came up with a recipe - and gave it out for free. It's a delicious variation on chocolate chip cookies, using ground oatmeal, nuts and adding extra chocolate with a grated Hershey bar (you can use any brand you love).

- Heat oven to 375 degrees.
- Cream together butter and both sugars. Stir in eggs and vanilla.
- Finely grind oatmeal in a blender or food processor. Combine the oatmeal, flour, salt, baking powder and soda in a medium bowl, and slowly add it to the wet ingredients. Beat just until combined. Grate chocolate bar using a microplane grater and add it, along with chocolate chips and nuts to the batter. Mix just to combine.
- Drop by heaping tablespoonfuls, 2 inches apart, on a greased cookie sheet. Bake for 10 minutes.
